Chicken minced meat and dishes from it (juicy meatballs)

Basically, for the preparation of stuffing use chicken breast - this is the most dietary part in a chicken carcass, but you can also meet minced chicken ham. Before grinding it on a meat grinder, it is necessary to separate the soft part from the bones and remove the skin. Such minced meat will be a little juicier, than with a brisket, but also accordingly more high-calorie. If too much ground meat was cooked and you did not use it all at once, fold it into a plastic bag and safely send it to the freezer. There it can be stored for about 2 more months.

Meatballs with minced chicken

Ingredients. A pound of chicken breast or ham, 200 gr. Rice, one large onion, one egg, several spoons of tomato paste and mayonnaise, 2 tablespoons of flour, a little mustard, vegetable oil, salt and other spices to taste.

Preparation. Rice thoroughly washed, poured into a saucepan, add salt and cook until almost ready. Pour it into a small colander and rinse with boiled water. If you took a ham, then separate the bones and skins, if the chicken breast - it's just cut and grinded in a meat grinder. Onions are cleaned and cut into small cubes or grinded in a meat grinder. Add it to the chicken mince, there drive the egg, pour rice and flour. The resulting mass is well kneaded.

We take the resulting chicken forcemeat and we make small balls from it, which we put on a hot frying pan and fry in vegetable oil first on one side, then on the other.

For the sauce, mix mayonnaise, mustard, tomato paste, add a glass of water, mix and pour roasted on both sides of meatballs. Cover and cover for about half an hour.

When preparing chicken meatballs, rice is often replaced with oat flakes or a roll. All other ingredients are left the same.

As for sauce, in which meatballs are stewed, it can be of several kinds.

Sour-tomato. Onions are fried in vegetable oil, several spoons of sour cream and tomato paste are added, half a glass of water, salt, spices to taste, everything is mixed and boiled in a frying pan for 3-4 minutes.

Vegetable. We take a few tomatoes, peel and cut into small cubes. Finely chop the onion and fry it with the addition of vegetable oil, when it is gilded put in the pan tomatoes, a few slices of chili, cut into strips of Bulgarian pepper. Stitched for 5-8 minutes. Pour two cups of broth, bring the mass to a boil. We cut the pumpkin into cubes and send it to the frying pan, cook a little without covering it, add two more glasses of broth, salt, season with spices and leave for another 10 minutes.

Mushroom. Cut half the bulb into small cubes, fry with the addition of vegetable oil. Mushrooms (champignons) washed and finely chopped, sent to onions, fry together 5-7 minutes. Pour into the frying pan half a glass of water (broth) and a few spoons of sour cream. We mix the resulting mass and squished another 7 minutes. Add the spices, salt and after a few minutes we remove from the fire.
