Cooking mushrooms fried with potatoes

Of course, not everyone has the opportunity to walk through the forest and collect real forest mushrooms. But, fortunately, today almost everywhere fresh or freshly frozen mushrooms have started to be sold - mushrooms, honey mushrooms, chanterelles, chanterelles. Therefore, if there is a desire to prepare a dish with mushrooms, there is no need to go to the forest, it is enough to visit any supermarket.

Mushrooms - a universal product, from them prepare salads, soups, second dishes. Here, for example, how can you make firearms fried with potatoes.

If you have a young potato, then it can not be cleaned, just clean it with a brush. Potatoes last year's harvest, of course, is better to clean. Then the potatoes should be cut into blocks or slices, as you like best, and rinse in cold water, washing off the starch. Washed potatoes should be dried in a colander or on a paper towel.

The main secret of the successful preparation of chips is that they should only be laid out on a well-heated frying pan with sufficient vegetable oil, and cook at first with high heat, stirring to make the slices roast, but not burned.

But potatoes must be salted after it becomes soft, otherwise the slices will not retain their shape.

While our potatoes are fried, take another frying pan and fry on it finely chopped onion. Then add onions to the onions from the bundle, without defrosting. The mushrooms will start to secrete the liquid and will be stewed in its own juice. Mushrooms must be immediately salted and add any other seasonings as desired. When the liquid is boiled off, add the sour cream to the mushrooms and, after reducing the heat, put it out for five minutes under the lid. If you use homemade, that is very thick sour cream, then you need to add a little water to the mushrooms.

So, we have one frying pan ready to fried potatoes, on the other - honey fried fried in sour cream. We spread potatoes on one side of a plate, on the other - a portion of mushrooms, sprinkle with herbs and serve.

But this is only one option for cooking, because cooking is, above all, creativity and improvisation. For example, you can make firearms fried with potatoes in one pan.

We need a half kilogram of potatoes, two hundred and fifty grams of frit, one onion, three cloves of garlic, salt, seasonings, vegetable oil. Opyata (both fresh and freshly frozen) must be boiled first.

Mine and peel potatoes (you can just wash it young), cut into slices, wash it again and drain it. Young potatoes can be cut into six to eight pieces (depending on the size), but the old one is better cut with straw. Bulb cut into half rings, chop the garlic. For this dish, it is better to use red salad onions, since it has a less harsh taste.

Pour the oil on the pan and let it warm up well, then pour out the potato slices and fry, not forgetting to stir it. When the slices of potatoes are covered with a crusty crust, add the mushrooms and continue to fry. After another five minutes, pour onion, garlic, saltmilk fried with fried potatoes and season to taste.

We continue to fry, reducing the heat and stirring occasionally, until the potatoes reach the ready. Should I cover the frying pan with a lid? There is one nuance. On the one hand, the potatoes under the lid will reach "conditionally" faster, and on the other hand, the potatoes prepared under the lid acquire the taste of boiled, not roasted. So, if you make fried dishes with potatoes during cooking, you decide to cover the frying pan with a lid, then for a short while, so as not to spoil the taste.

After the potato slices have become soft, the dish is ready. We spread it on plates and sprinkle with greens. It is very good to serve honey and potatoes with cold fresh sour cream and green onions.
