Chicken liver paste recipe

Pate is a pasty mass, which is often used for making sandwiches, stuffing eggs, tartlets, etc. Of course, today any pie can be bought at the store, but home-cooked food is certainly tastier and more useful.

We bring to your attention a recipe for pate from chicken liver. It is not difficult to cook this dish, but the result will certainly please you.

So, the basic recipe for pate from chicken liver includes the following ingredients: a chicken liver in the amount of 1200 grams. Better, of course, to take a chilled product, but you can use frozen livers. Four medium-sized bulbs, a glass of plain milk and the same cream, having a fat content of ten percent. In addition, we need one hundred and fifty grams of butter. It is very important to take quality oil for the preparation of pate, since the taste of the dish depends to a large extent on this product. For seasoning we need salt, nutmeg, sweet and black pepper.

Liver is washed, carefully watching, so that there are no remains of bile on it. Then put the liver in a bowl and pour the milk, leaving it soaked for two hours.

Onions and garlic is cleaned, cut and fried in vegetable oil until soft. During the frying, we constantly interfere with the vegetables, so that they do not brown.

Soaked in milk, the liver should also be fried using a small amount of vegetable oil. The liver is fried very quickly, literally five to seven minutes. It is very important not to overexpose the liver on fire, otherwise it will become dry, which will affect the taste of pate. Therefore it is more convenient to fry the liver in portions, spreading it on a pan in one layer.

Cook the liver and onions in a puree mashed blender or a couple of times we rotate through a meat grinder. In puree, pour in cream, salt and season with pate spices. Then add the pieces of softened butter and again all carefully mix, it is better even to mix this mass with a mixer. Ready pate spread on jars and store in the refrigerator for no more than three days.

Of course, the above recipe for chicken liver paste is only the basis on which you can experiment. For example, in addition to onions, add carrot to the pate. Some prefer a more complex recipe for chicken liver pate, which includes, besides the named products, mushrooms, boiled eggs, cheese.

Using the recipe given for chicken pate, you can prepare a festive snack. Pate is prepared similarly, just do not add butter to it. Ready pate laid on food film (if the farm has a bamboo mat, then the film is better to bed on it) in the form of a rectangular formation. Butter, soften, mix with an equal amount of grated cheese and spread this soft mass on the paste layer. Then roll the roll, wrap it in a food film and send it to the refrigerator for a couple of hours. Before serving, roll the pate from the paste into a serving.

And if you plan to treat children with pate, you can make "hedgehogs" out of ready-made pate mass. To do this, we form oval-shaped blanks, making an elongated "snout", eyelets and a nose are made from pieces of olives, and needles - from purified sunflower seeds. If there are many guests, you can make a whole "family" of hedgehogs of different sizes. Children, for sure, will be delighted with such a treat.

Lovers of seafood can cook fish pate, the recipe of which, in principle, is similar to that described above. To prepare this snack, you can use boiled, salted, smoked fish or canned fish. The easiest option is the herring pâté. We take two medium salted herrings, clean and separate the fillets. Boil a couple of carrots and the same number of eggs. We pass through the meat grinder (or grind in a blender) the fillets of herring, eggs, carrots and two most common processed cheese. We rub this mass and combine it with soft butter. This pate is very good on sandwiches.
