Traditional German Pie "shtreizel": a recipe for cooking at home

Like all the peoples of the world, the Germans especially cherish their culinary history, in which Streuselkuchen pie takes pride of place, or "streysel". Who came up with this recipe, is not exactly known. But there was information that by the end of the XIXth the pie was known and able to cook in every region of Germany.

Initially, the shtreizel was prepared on the basis of a yeast dough with a filling of pudding or fruit filler and sprinkled with crumbs. Today, the pie is made both on biscuit and on sandy corn, depending on the density of the filling, and with different heights of the scissors.

The success of the German pie is largely due to the addition of sugar-flour crumb, which is now also called a streeyzer. After baking, it turns into a ruddy crispy crust and gives the cake not only great taste, but also a presentable appearance.

It's quite easy to make a culinary crumb with your own hands, or a scraper. The recipe for the preparation involves the use of such ingredients: 60 g of flour, 30 grams of sugar and butter at room temperature. The optimal proportion for the scraper: 2: 1: 1. You can add an egg yolk (for a crispy crust). All ingredients are combined in one dish, and with a conventional fork, they are rubbed to the state of crumbs. After that, the mass is further crushed by hands.

You can sprinkle any pies, cakes, cakes, muffins and biscuits with a ready-made streeze. Thanks to the inexpensive and easy to prepare crumbs, you can achieve a ruddy and aromatic crust on sweet baking.

Cooking tips:

  • Butter can easily be replaced with quality margarine;
  • If the crumbs stick together, you need to add a little more flour to it, and if it crumbles, then, on the contrary, the oils;
  • The shtreisel will be even more delicious if you add cinnamon, orange peel, chopped nuts or cocoa to it.

Silesian Pie "shtreizel": recipe with cottage cheese

This recipe comes from Silesia - a historical region in Central Europe that covers part of Germany, Poland and the Czech Republic. And still there is still debate: who really came up with a real drizzle, Germans, Poles or Czechs.

In Silesia, the shtreizel is prepared according to a traditional recipe, that is, based on a yeast dough. As the filling is used the most delicate curd mass based on cream cheese, and on top the cake is abundantly sprinkled with culinary crumbs.

The dough for pie is kneaded from a bag of yeast (7 g), a glass of milk, 50 g of butter or margarine, 50 g of sugar, a pinch of salt and 450 g of flour. Prepare the spit is not necessary. Just combine all the ingredients and knead the dough. Leave it for half an hour on the table, wrapped in a film to fit a little.

Meanwhile, beat the mixer with 3 eggs, 200 grams of sugar and the same amount of butter until a thick and high foam forms. Then add 1 kg of cream cheese to the same mass. Stir well and put on time in the refrigerator.

Make a cutter. The recipe is as follows: grind 200 grams of sugar, the same amount of butter, a little cinnamon and 350 g of flour.

Form a cake. Roll the yeast dough and lay it on a rectangular baking sheet, slightly lifting the edges. From the top, evenly distribute the curd filling and sprinkle it crumbly. Bake at a temperature of 175 degrees 35 minutes.

Original cake "strawberry" with strawberries: recipe

To prepare the dough: whip 50 g of soft butter to the consistency of the cream, add 150 g of sugar and egg. In a separate vessel, combine the sifted flour, 10 g of baking powder and a pinch of salt. In the egg-and-butter mixture add dry ingredients and 100 ml of milk. Beat with a mixer and pour the dough into a baking dish. On top, put the cut into large slices of strawberries. At the top, the spray is evenly distributed.

The recipe for cooking crumbs: grind your hands on 4 tablespoons of sugar and flour, 50 grams of butter and the same amount of coconut shavings. Bake cake 35 minutes at a temperature of 175 degrees to dry skewers.

Streysel with cherry

Gentle and crumbly sand cake , juicy with a pleasant acidity filling and crisp - which can be better for home tea drinking. This is one of the most successful combinations of products for pie "Shtreizel." The recipe for cherries is simple cooking and high taste.

First you need to make a short pastry made from 150 g of butter, 50 g of powdered sugar, eggs and two glasses of flour. The dough can not be cooled, but immediately distributed in the form and, after laying out the load (peas, beans) on it, send it to the oven for 10 minutes.

In the meantime, the glass of cherries should be cleaned of seeds, add two tablespoons of sugar and the same amount of starch. Mix. After that, make a scraper. The recipe for its preparation in this case consists in grinding 50 g of sugar, 100 g of flour and 50 g of oil to a crumb.

On the sand cake put the cherry filling, from above evenly distribute the crumb and send the cake to the oven for 20 minutes. Cut the cutter better after cooling.

Raspberry pie crust

Shreisel with chocolate chips

To make a dough using this recipe, mix a glass of sugar and eggs (2 pcs.) With a mixer until lush foam. Then add a glass of warm kefir, a teaspoon of soda, 2 glasses of flour, 50 g of cold melted butter and vanillin.

Whisk all ingredients until smooth. Pour the resulting dough into a baking dish. On top decorate with chocolate shtreizel, prepared from the same amount (50 g) of flour, cocoa, sugar and oil. Bake for 40 minutes at 180 degrees.
