Strudel with cherries. The recipe is quite simple, with which anyone can cope. Just want to say that fit and ready-made puff pastry, then the preparation of strudel will take even less time. If you have a desire to knead the dough on your own, then prepare half a kilo of good wheat flour, 200 grams of butter and a glass of boiled water.

In a bowl, mix the flour, water and 50 g of butter, pre-softened in a water bath. For the beginning of 10 minutes vigorously mix the dough, then divide it into two parts, cover with a napkin, so that the dough rests. After a quarter of an hour, roll the dough into thin layers, cover with a napkin and leave for a quarter of an hour, then leave the dough not covered for a while.

The feature of the test for the strudel in its thickness - it should be as thin as possible, so be very careful when rolling. Professional bakers roll the dough to the thickness of papyrus paper! The edges of the rolled dough, as a rule, are thicker than the middle, so they can be cut.

The filling for strudel can be prepared from fresh cherries or from canned in own juice.

To make a filling of fresh cherries you need about 0.6 kg of fresh cherries or frozen, a small amount of sugar, so that the filling was not very acidic and 1 tbsp. Tablespoon of starch.

Cherries free from pits and put in a saucepan. After heating on medium heat, add sugar and starch. Strudel with cherries - the recipe allows you to improvise: you can put a little cinnamon, vanilla or orange peel.

If you use a canned cherry, it usually has a lot of juice for the filling, just throw the cherry in a colander and drain the cherry juice.

Since the filling is very juicy, you can grease the dough with an egg so that it does not melt.

Now on the pre-rolled out dough, spread the remaining softened butter. At high temperature in the oven, butter helps open up the puff pastry. Spread an even layer of stuffing and turn into a roll. The lateral edges of the roll should be turned inside a few centimeters so that the filling does not leak out. The top part of the roll is also greased with butter.

The oven must be warmed up beforehand. On a baking tray, oiled (vegetable or creamy), put the strudel and put in the oven. The first 10 minutes strudel is baked at 200-220 ° C, then reduce the heat and bake for about half an hour at a temperature of 180 ° C.

Finished strudel covered with a napkin or towel for 10 minutes. After that, cut into small pieces and sprinkle with powdered sugar.
