Mayonnaise at home: recipe without eggs

The mayonnaise, cooked according to this recipe, does not differ from the natural in appearance. It is the same white, dense, but most importantly, useful and natural. Very quickly, without putting much effort, you can prepare such a lean mayonnaise at home.

The recipe for cooking vegan mayonnaise is to do the following:

  1. Vegetable oil (300 ml) and cold soy milk (150 ml) are beaten with an immersion blender until a homogeneous emulsion of white color is obtained.
  2. To the basis for mayonnaise spices are added: table mustard (1 tablespoon), lemon juice (2 tablespoons), salt to taste, a little sugar and pepper.
  3. All ingredients are well beaten with a blender until a thick consistency is obtained. If the mayonnaise is still liquid, you can add a little lemon juice.

Instead of soy milk, you can use any other, but necessarily plant-based (coconut, almond, etc.). The main thing is that it should be well chilled. Milk can also be replaced with 100 ml aquafaba - decoction, which remains after cooking chickpeas. Only in this case, first the aquafaba is mixed with spices and whipped to a lush foam, and then a vegetable oil is poured into it with a thin trickle.

Vegan mayonnaise from tofu

It is very easy and quick to prepare mayonnaise for vegan from tofu cheese. To do this, a full cup of cheese is poured into a bowl, add the vegetable oil ( ¼ cup), a slice of garlic, a pinch of salt, a teaspoon of mustard and twice as much vinegar. All the ingredients are thoroughly whipped with an immersion blender until a white, homogeneous mass is obtained.

If vegan mayonnaise will be used immediately, it is recommended to add fresh herbs to it. From this, the taste of salad dressing will only benefit. Such mayonnaise with greens can also be spread on bread and served as a snack.

The recipe for lean mayonnaise from sunflower seeds

This mayonnaise in appearance and taste is more like an independent sauce, which is served to vegan cabbage rolls or chicken meatballs. But in salads with fresh vegetables, it harmoniously complements the taste of the dish.

Vegan mayonnaise of seeds is prepared according to the following recipe:

  1. A glass (200 ml) of purified sunflower seeds and half of the pumpkin seeds are poured into the bowl of the stationary blender. Then add olive and linseed oil (2 tablespoons), juice of whole lemon and agave syrup or maple (1-2 tablespoons to taste).
  2. Next to the ingredients are introduced spices: black and sea salt (¾ tsp), mustard powder (1 teaspoon), black pepper and a mixture of Indian spices asafoetida (at the tip of the knife).
  3. Lastly, water (1 item) is added to the blender bowl. In the process of whipping, you may need a little more water. You need to look at the consistency and top up if necessary. Bean mayonnaise

Mayonnaise, prepared according to the recipe given below, is identical in color, taste and consistency to traditional mayonnaise on egg yolks. In this case, it is prepared only on the basis of white beans (canned or boiled) and vegetable oil.

How to prepare vegan mayonnaise from a string bean, we tell in detail:

  1. With a can of canned white beans with a volume of 380 ml, you need to drain all the liquid. You can also take the same amount of boiled beans without water.
  2. Pour the contents of the can into the blender and grind it to a thick paste.
  3. Add the vegetable oil (300 ml) and continue whisking for another minute.
  4. Add a little salt and sugar ( 1/2 tsp) to the chopped beans , dry mustard (1 teaspoon) and lemon juice (2 tablespoons). The latter ingredient, if necessary, can be replaced with a tablespoon of vinegar. If desired, you can add dried or fresh herbs.

Useful mayonnaise from cashew nuts

Homogeneous in consistency, natural and delicious mayonnaise is obtained from cashew nuts. For its preparation, a minimum of ingredients is used, and the taste is simply excellent. Before cooking, the nuts must be soaked for night or a day in cold water with a tablespoon of apple cider vinegar.

Vegan mayonnaise from cashew can be prepared in various ways:

  1. Soaked in water and apple vinegar cashew nuts mixed in a bowl stationary blender with cold soy milk (50 ml). Gradually, in the process of whipping, vegetable oil (up to 80 ml) is added to it, salt and pepper are added (by pinch). Consistency should be dense and homogeneous.
  2. The soaked nuts are beaten with a submerged blender or in a stationary bowl with garlic (2 slices) and lemon juice (80 ml). Add a tablespoon of mustard powder and sea salt ( ½) tsp. Mayonnaise is as delicious as prepared according to the first recipe.

Vegan mayonnaise: a recipe from flax seeds

For the health of the body, flax seeds are recommended to be consumed every day. But if in its pure form there are not very nice, then in the composition of mayonnaise will be just right.

Vegan mayonnaise based on flax seeds and flaxseed oil is prepared as follows:

  1. Flax seeds (tablespoon) are soaked overnight in cold water.
  2. In the morning, the enlarged seeds are washed from the mucus that is released, beaten with a submerged blender, then linseed oil (200 ml) is poured into it with a thin trickle.
