In Russia, traditionally pancakes with minced meat (a recipe with stuffing from cottage cheese, meat) or even without it was customary to cook for Maslenitsa. Now it is not necessary to observe this at all. Pancakes with minced recipe are uncomplicated. You can prepare them at any time and with a wide variety of stuffing: meat, vegetable, sweet.

For example, pancakes with minced meat, a recipe with mushrooms. Dough for them is prepared from 100 grams of first-rate flour, two eggs, 150 grams of milk, a spoonful of sugar and half a spoonful of melted butter. Knead the fresh dough and bake thin pancakes, on the toasted side of which put a bit of minced mushrooms and wrap.

The filling is prepared from 100 g of raw mushrooms, a small onion, 25 grams of sauce, one egg, a couple of spoons of breadcrumbs, salt, 40 g of sour cream, a spoonful of melted butter and parsley. To make minced meat, you do not need to chop mushrooms very finely and fry in oil. Finely chop onion and fry separately. Then put onion in mushrooms, add not too thick hot milk sauce, yolk of raw egg, pepper, salt and mix all the ingredients.

The surface of wrapped pancakes should be coated with protein, dipped in breadcrumbs and fried on each side in oil, then put the minutes for 5 in the oven. Serve pancakes to the table better in a dish, pre-heated. Serve sour cream in the gravy bowl separately.

Mushroom pancakes with minced meat recipe have not one. You can also do so. Dried mushrooms (5-6 pieces) boil, rinse and thinly cut. Finely chopped large onion to pale brown shake fry in lean oil. Three carrots of medium size to be cleaned, cut into small cubes and boil until half ready. Remove a single fresh apple, remove the core, grate it large and add it to carrots, cover and simmer for another 5 minutes. Then drain the liquid and add fried onions, 5-10 spoons of green peas and canned mushrooms.

In the broth of mushrooms add 75 grams of flour and 2 tablespoons of butter. The sauce should be slightly heated to allow the oil to dissolve. Half the sauce to add to the vegetable mass, season with pepper, salt and stuff pancakes. Then fry them on both sides and pour the second half of gravy into which to add a couple drops of lemon juice and salt. Instead of sauce, you can use sour cream.

Ordinary vegetables are also quite suitable to cook pancakes with minced meat with them. The recipe for cabbage looks like this. The liquid dough is made from milk and water taken for 100 grams, about 80 grams of first-rate flour, salt, one whole egg and one more yolk. The filling is prepared from a kilogram of chopped cabbage, black ground pepper, 60 g fat, sugar and salt. Cabbage should be chopped, seasoned and left for a while. In the hot fat, add a little sugar, heat until it becomes brown. Cut cabbage well and add to fat, season with pepper and cook until ready.

For dessert, you can prepare pancakes with minced meat from nuts. It is necessary to bolt the liquid dough and bake thin pancakes in a frying pan.

To make the filling, you need to boil the milk, add ground nuts, jam, rum or cognac into it and boil over a small fire until the mixture turns into a homogeneous mass. To prepare gravy for these pancakes, you need to pour sugar into the boiled milk. Beat egg whites in a strong foam and cook dumplings from them, dropping foam with a spoon into boiling milk.

For the test you need: 200 grams of first-rate flour, a pinch of salt, 2 fresh eggs, 400 grams of fresh milk, a spoonful of sugar. For the filling: 250 grams of raw nuts, 100 grams of fresh milk, a spoonful of jam from any berries, a spoonful of rum or cognac. For gravies: proteins of three eggs, a spoonful of powdered sugar, 500 grams of fresh milk, a spoonful of vanilla sugar.

Baked pancakes spread with nuts filling, roll up, pour on gravy and tear with vanilla sugar top.
