Lemon pie is an excellent dessert

Lemon pie is a traditional French dessert with an incredibly tender and refined taste. Our mistresses met him not so long ago, and he immediately became a favorite dish of many, although it could not be different: who would not like crisp short dough, delicious lemon cream and an airy layer of whipped proteins? Some call the lemon pie a pie, others - a cake, but all unanimously admit that it is not only a tasty and fragrant dessert, but also a real table decoration.

And one more important news - such a dish is prepared quite simply and quickly. So, let's get started.

Ingredients

To bake a lemon cake, you need the following products:

  • For shortbread: flour - 250 grams, sugar powder - 50 grams, butter - 100 grams, egg yolk of one egg, a pinch of salt;

  • For cream: milk - a quarter liter, sugar sand and potato starch - 30 grams each, three egg yolks, lemon juice (one), two lemons peel;

  • For meringue: sugar (sand) - 150 grams, powdered sugar - 100 grams, eggs for chicken - 5 pieces.

Cooking dough shortcake

On the board you need to sift the flour, make a hole in it, in which to put the yolk, sugar powder and chilled butter, cut into small cubes. Mix the ingredients with your hands, then cut with a knife until the crumb is formed, and then knead the dough. A little secret: you need to act quickly so that the cold oil does not melt completely, otherwise the dough will crumble. Ready to cover with a clean cloth napkin or wrapped in a food film and keep in the refrigerator for about an hour.

We bake corn

Now you need to bake a cake, or rather, its base. From the dough roll a round cake and spread it into a form with corrugated bumpers. Surplus dough cut, put on top of it parchment or special paper for baking and put the press (so that the base of the cake is not bloated during baking). We put the mold in the oven, heated to 180 - 190 degrees, and hold there about 15 minutes. Then we take out, remove the press with paper and put it back in the oven for the same period. Should get a golden cake.

Making Cream

We put sugar in the milk, put it on the stove, and wait for it to boil. Mix the yolks with starch and add to them 2 large spoons of hot milk. Then mix this mixture with the rest of the milk and keep it on fire, stirring. As soon as it boils, remove from the plate, add grated zest and lemon juice, mix thoroughly.

Whisk meringue

In a thick foam, beat egg whites with sugar (add sand gradually). In the received weight we spread sugar powder, we mix it with a wooden spatula and divide into two identical parts. Add one serving to the cream.

Lemon pie. The final stage

Cream with whipped proteins again put on the fire to bring to a boil. Then we shift the hot cream onto the dough cake, and on top we add the second part of the protein mass. This can be done using a pastry syringe or bag. We put the lemon tree in the oven and keep it until the meringue gets a pleasant light brown color. We get the pie from the stove. When it cools down, we send it to the refrigerator for one and a half to two hours. Now our delicious cake is ready.
