How to cook azu from beef with pickled cucumbers

Azu from beef with pickled cucumbers is one of the best dishes of Tatar cuisine. In earlier times, horse meat was used for its preparation, and lamb is less common. Today it is customary to prepare azu from beef. Literally the name of the dish means chopped meat in spicy sauce. We offer a classic recipe for azu from beef.

Ingredients:

  • A piece of beef (lamb) on a bone weighing about 700 grams;
  • Pickled cucumbers - a few large pieces weighing 200 grams;
  • Tangerine fat or vegetable oil - 100 grams;
  • Onions - 1-2 heads of medium size;
  • Meat broth or plain water - 1.5 liters;
  • Potatoes - several root vegetables with a total weight of 500 grams;
  • Fresh (canned) tomatoes - 3-4 pieces;
  • Parsley, salt, coriander, pepper, seasonings.

Technology of preparation

Azu from beef with pickled cucumbers is prepared as follows.

Peel the peel from the salted cucumber, cut them into strips. Peel and cut into on the semicircles onion. Deep heat the kazan on fire, put in it crushed lard or pour oil. From fat it is necessary to heat fat, cracklings to catch and postpone.

In incandescent oil throw the meat cut into large pieces. Fry it on high heat. Must form a crust. Meat should not be fried until ready, it is necessary that it quickly blush and cease to give juice.

While the meat is stewed in a cauldron, cut the tomatoes. The juice, which is released during cutting, carefully collect and together with the pieces put in the cauldron. Stew with the lid open until tomato juice is evaporated.

Pour the meat broth or plain water into the cauldron. Depending on the density of beef with salted cucumber you want to get, add the right amount of broth. Cover the container with a lid and simmer for 40 minutes.

In a separate frying pan on warmed oil lightly, pickle cucumbers. You can do this in a small saucepan and instead of oil pour a little broth. Put the cucumbers out for 15 minutes.

Step 7

Peel the potatoes. Cut it into pieces of an arbitrary size. Fry in oil until half cooked.

Step 8

Check the readiness of the meat. If it is well-stitched, then we put salt cucumbers (pre-mix them) and cut potatoes. You can put sugar to taste. Cover the cauldron with a lid, put it out for another 15 minutes.

Step 9

While azu from beef with pickled cucumbers comes to the ready, cut finely greens and garlic. Season the prepared dish and serve it to the table.

Azu from beef in pots

A similar composition of products will be needed to prepare the azu in pots. All ingredients must be fried until half-ready in the same way as described in the main recipe. Then lay the products in the pot with layers: meat with onions, pickles, tomatoes, potatoes. All pour hot meat broth. Put the pots in the oven for 50 minutes. The temperature should be about 200 degrees. Before serving sprinkle with chopped greens.
