Marinated mushrooms are a wonderful dish that is pleasant to try in summer and winter. The preparation process is easy, you need any sorts of mushrooms. How to marinate them delicious, you'll find out after reading the article to the end. And then your pickled mushrooms will be praised by your relatives, acquaintances and neighbors.

General scheme of marinating

You will need:

  • Ordinary water (one liter);
  • black pepper;
  • Laurel leaf (1 piece in each jar);
  • Salt (150 ml);
  • garlic;
  • Vinegar 25% (one tbsp.);
  • dill;
  • Mushrooms.

How to marinate

For harvesting, you can use buttered mushrooms, podberozoviki, honey agarics or boletus. The main thing, remember: mushrooms of different species are separately marinated. Since they all have different cooking times. Choose only fresh and whole mushrooms. So, let's get started. We take one kilogram of alcohol, clean them of excess garbage and wash. Cook for twenty minutes in a saucepan. To get them strong, lower them into the boiling water. Cook is in an enamel saucepan. We begin to prepare the brine. In the water add salt, garlic chopped, sprig of dill, pepper, bay leaf, vinegar. For fans of spicy food if desired, you can add pepperoni pod. Do not forget to remove foam in a timely manner so that the marinade is transparent. So, cook for twenty minutes, and then put the mushrooms in sterilized jars and pour hot brine. Add one spoonful of vegetable oil hot. We roll and turn the jars.

How to pickle the wild mushrooms

Main Ingredients:

  • Water (two liters);
  • Vinegar (two tablespoons);
  • Salt (200 grams);
  • Peppercorns (twenty pieces);
  • Five laurel leaves;
  • Cloves (ten pieces);
  • spice;
  • Forest mushrooms.

How to marinate

You can take any mushrooms, in our case we will use for cooking a kilogram of mushrooms. Rinse them well, clean them of debris. Heat the water in the pan, and as soon as it boils, throw mushrooms into it and try for three minutes. Then sweat with cold water from the tap and hold for a few minutes. Take a deep saucepan and lay the layers first mushrooms, then salt with spices. Leave for a few days (about three days). Main Ingredients:

  • Salt (three tsp);
  • Pepper peas (twelve pieces);
  • nutmeg;
  • Sugar (1/2 tsp);
  • Water (two glasses);
  • Two leaves of laurel;
  • Acetic acid (60 ml);
  • One onion;
  • Polish mushrooms.

How to marinate

Method one (in its own juice). We buy on the market a kilogram of Polish mushrooms. Arriving home, first select them. The larger ones will be cut into pieces, and the small ones will be marinated entirely. Then cleanse of excess debris, rinse well under cold water. Take a colander, flip the mushrooms over it to make the glasses superfluous. Then we put them in a saucepan, pour two glasses of water and cover with salt. Preheat on fire until juice is released. Cook for ten minutes. Next, add the pepper and the whole peeled bulb. Many housewives use a broth for marinade, in which Polish mushrooms were brewed. But it's pretty dark. Therefore, we recommend preparing marinade from sugar, water and vinegar. Preheat this mixture in a saucepan and dip mushrooms there. A couple of minutes of boiling and then folded into clean jars. Close the lid.

Method two (with sterilization). As described in the previous recipe, we select and boil mushrooms in salted water for twenty-five minutes. Then we throw it back to the colander, when the excess liquid drains, we put it into glass jars. We prepare marinade. Mix the water, sugar and vinegar. Fill it in jars not to the end, so that there are two centimeters from the neck. We put the bay leaves on top and fall asleep with peas. Banks are sterilized. To do this, put a wooden grate on the bottom of a large pot. Place the jars on it, cover it with covers. Fill with hot water and sterilize for thirty minutes. Then we take out the cans and roll them up.

Marinated mushrooms are nice to eat separately or with some garnish, for example, with boiled potatoes. Bon Appetit!
