How to bake a stick in the oven: a recipe

The baked Veprevo knee is a traditional Czech dish, which has long been a real symbol of the country - along with dark beer and the Witt cathedral. At the same time this recipe has become very popular in other countries, but it will always be associated with the Czech Republic and its ancient traditions.

However, the baked shank in Czech in its original form has already become boring. Therefore, the famous chef Zdenek Poglreich decided to slightly modify it, and the result is to be presented to the public.

Necessary ingredients

To prepare this dish you will need:

  • Shank - 4 pieces;
  • Carrots - 2 pieces;
  • Garlic head - 1 piece;
  • Onion - 2 pieces;
  • Parsley root - 1 piece;
  • Celery root - 1 / 2p .;
  • Tomatoes - 3 pcs .;
  • dark beer;
  • butter;
  • vegetable oil;
  • rosemary;
  • thyme;
  • salt;
  • pepper.

Selection and preparation of meat

Before baking the stick in the oven, it is necessary to choose it correctly and prepare it. For this recipe, a small part of the knee is suitable, and it is better to use young pork, which is much softer and more tender. Each rudder should be thoroughly washed and treated on an open fire. Then with a knife small incisions are made around the piece. This is necessary in order to bake the stick in the oven, along with vegetables and special sauce, which will have to be absorbed into the meat, and the skin will interfere with this.

Cooking sauce!

On a small amount of vegetable oil, fry garlic cloves. Then they need to stuff meat by inserting the teeth into the cuts. Next, fry large cut carrots, celery, parsley roots and onions rings. To bake the stick in the oven and at the same time give it the whole taste of the products, roast garlic and diced tomatoes without skins are added to the roast. The whole mixture is fried for a few more minutes and poured onto a baking tray, which can be pre-covered with parchment or foil to prevent sticking.

Now you need to put the meat on the sauce in the pan and put the dish in the oven, where it will be cooked at a temperature of 180 degrees. All cooks know how much to bake in the oven, but knowledge is mostly intuitive. Therefore, no one can give an exact and unequivocal answer in time parameters. The fact is that it is cooked until the meat begins to lag behind the bone. You can check this with a standard plug. After that, the pilaf is left in the oven for another 10-15 minutes to allow it to reach full readiness due to the accumulated temperature. It is also worth noting that during heat treatment it is necessary to constantly water the dish with dark beer, although some prefer to pour it on the baking tray before cooking. However, the second method is more convenient, besides, it allows the meat to acquire a beautiful color.

Before baking the stick in the oven, you need to decide on the garnish. Traditionally, stewed cabbage and seasoning in the form of grated horseradish are used. However, this recipe recommends simply pouring meat with gravy with a small amount of butter and served with fresh bread. No other side dish is required, because only this way you can taste the real taste of this dish.
