Cutlets in the oven with gravy

Cutlets have long been an integral part of our diet. Traditionally, this dish is everyday for us. We used to think that cutlets come only from chopped meat. Many do not know that cutlets can be cooked not only from different types of meat (beef, lamb, pork, etc.), but also from seafood, fish, mushrooms and vegetables. Meat cutlets in the oven with the sauce are perfectly combined with different side dishes. They are suitable for various vegetables, pasta and cereal. Try to cook the patties in the oven with gravy.

For this we need the following ingredients.

For stuffing:

  • Kilogram of meat (a third of beef, two-thirds of not too fat pork) - 1 kg;
  • 4-6 pieces of white bread;
  • 200 ml of milk;
  • 2-3 onions;
  • 5 cloves of garlic;
  • vegetable oil;
  • One chicken egg;
  • Salt, ground pepper, paprika, chili, curry - to taste;
  • breadcrumbs.

For gravy:

  • 2 tablespoons each. Ketchup, sour cream and vegetable oil;
  • About 100 ml of liquid (dry wine or water, where lemon juice is added);
  • Salt, greens, spices - to taste.

So, to cook the cutlets in the oven with gravy, the meat needs to be washed, cut into pieces.

Bread must be soaked in milk in such a way that the milk covers it a little. The meat is scrolled through a meat grinder. Onion peeled, rinsed in cool water and cut. Then turn the soaked bread, minced meat, onions and cloves of garlic through a meat grinder. Scroll should be, alternating components for better uniformity of stuffing.

Milk, which is left from soaking bread, can also be poured into minced meat. Then add salt, vegetable oil, spices, egg, finely chopped greens. All this must be carefully mixed (preferably with hands) until a homogeneous mass is obtained. From the ready-made forcemeat it is necessary to form the needles of the desired shape (round, oblong, chopsticks, etc.).

Pour a few breadcrumbs on a plate to cover a plate with a thin layer. When forming a little bit, one must roll off each side from two sides in breadcrumbs, while simultaneously adjusting the shape of the cutlet with his hands. Do not make a layer of breading thick. To cutlets did not fall apart, it is recommended to fry them in a hot pan (that a crust formed on the cutlet, and juice did not flow from it), so they will remain whole and juicy. Of course, you can serve cooked cutlets in the oven with gravy, but it's better to cook the patties in the oven in sauce. It will help to make cutlets more piquant and tender in taste.

For the simplest sauce it will be enough to mix in the bowl of ketchup (or tomato paste with the addition of sugar), sour cream, water or wine, adding pepper, spicy herbs salt. Then pour this mixture of fried on both sides cutlets. Further stew the cutlets in the sauce follows under the lid.

To check if the cutlets are cooked in the oven with gravy, you can cut the largest cutlet into two pieces. Meat in the finished cutlet should be sufficiently monophonic, without the presence of pink veins, and the juice that stands out when pressed should be transparent.

Such cutlets can be eaten with almost any garnish: fried and boiled potatoes, pasta, buckwheat, rice, steamed vegetables, etc. Another important advantage of such cutlets - the sauce will be garnished, from which the dish will become much tastier!

What if you do not like meat? Prepare the carrot chops in the oven, as this dish is healthy and tasty.

For this we need?

1 kg of sweet carrots, 1 sour apple of medium size, 150 ml of low-fat milk, 2 tablespoons of rice flour, several pieces of dried apricots, 1 large egg.

Carrots need to be cleaned and rubbed on a fairly shallow grater. On a large grater we rub an apple, peeled.

In the pot, pour the milk, put the carrot, apple, mix everything and stew. At the end, add gradually rice flour, carefully kneading until the mass thickens. Then you need to cool slightly, add the egg and mix well. You can add cinnamon. Pre-cooked dried apricots must be cut into small pieces. We mix everything, we make chopsticks with our hands, we put them on a baking sheet, which must be covered with parchment or silicone rug. We put the minutes for 40 in the oven, heated to 200 degrees. Serve with sour cream.
