Rice flour in cooking

Rice flour, made from ground rice, consists of starch, while it does not contain gluten, which contributes to its rapid digestion. It is useful for people who have diseases of the digestive system, because it preserves the nutritional value of this product. This flour is widely used in cooking: it is made from noodles, various sweets, dough and other pastries, and it is also used as a thickener in the preparation of sauces and goulash, breading of meat and fish. Even in baby food, it can be found quite often.

However, rice flour is not used to make bread and pies on yeast because of the content of the same gluten. It absorbs a sufficiently large amount of water, so the product at the outlet is dry. To avoid this, more eggs or wheat flour are added to the dough (up to one-fifth of the portion). In this case, the products of these ingredients are prepared somewhat longer.

Usually rice flour is not only a substitute for various gluten, very often it is much more delicious baked. So, Asian cuisine does not do without it when making sweets and coconut cakes.

Consider several recipes, where this flour is used

1. Bread.

Ingredients: two tablespoons of yeast dry, one spoonful of sugar, one hundred and fifty grams of water, three hundred grams of rice flour, one egg, one spoon of salt, little vegetable.

Yeast with sugar must be dissolved in warm water and left for a while, so that they become foamy. Then add salt, egg, flour and a small amount of any liquid, such as water or milk. Place the dough in a greased baking sheet and let it go up, only then it is put in the oven and baked for half an hour.

2. Cookies.

Ingredients: rice flour (one hundred grams), corn flour (thirty grams), half a spoonful of cookie powder, fifty grams of sugar, fifty grams of butter, one egg.

All ingredients must be mixed and kneaded dough. It is rolled thinly enough on the surface, previously sprinkled with rice flour. With the help of molds, figures are cut out, smeared with milk or egg and baked for ten minutes in a well-heated oven.

Here the most important point is that the dough should be rolled out pretty quickly.

3. Cake "The Queen".

Ingredients: For the test - rice flour (fifty grams), one hundred grams of butter, one hundred and fifty grams of chocolate, one hundred grams of sugar, four eggs, one packet of vanillin, one spoonful of cookie powder. For glaze - fifty grams of butter, one hundred grams of chocolate, one spoonful of rum.

Butter is melted in a saucepan, chocolate and sugar are added, until they are completely dissolved. Then add egg yolks, vanilla, cookie powder, rice flour, and whipped egg whites. The dough is poured into a greased form and put in the oven to bake for forty-five minutes.

In the meantime, prepare the icing. To do this, the butter is melted, rum and chocolate are added and well mixed until the latter dissolves completely.

The cooled cake is watered with glaze and decorated with nuts, various sprinkles or pieces of chocolate.

Thus, rice flour dishes are not only nutritious, but also very useful, because it contains a large number of vitamins and trace elements, which are necessary for the life of the human body. Such flour is recommended for various diets, but the usual recipes are also quite suitable, and the dishes are not less valuable and nutritious. In various kitchens of the world this product is used, especially it is popular in Japan. In this country it is used regularly.
