This type of tea is included in the category of highly fermented oolongs, but the degree of fermentation is still lower than that of black tea.

The production of blue tea is very complex and requires a very tender attitude. Mature leaves are harvested from adult bushes. First, they wither in the sun, and then put in baskets and put in the shade where they pass fermentation. Regularly collected leaves are gently mixed and kneaded, while carefully watching that they do not break. After obtaining the required degree of fermentation (and this is approximately 60 percent), the tea leaves are dried at a temperature of two hundred and fifty to three hundred degrees. Such drying is often carried out in two stages. First, the leaves are twisted and dried for several minutes, and then the complete drying process is completed. Well, in the end, it remains only to pack, pack and send for sale.
