The turn itself (it is known to us as thorns) is a unique plant, because scientists can not attribute the fruits of this plant to berries or fruit. Small dark blue berries with a whitish coating have a round shape and are distinguished by a sweet, rich, somewhat tart taste. In addition to many other nutrients, vitamins and minerals, the thorn bush is rich in valuable organic acids, pectin, flavonoids, fatty oils and fiber.

Mention of the bush itself often appears in the myths and legends of European peoples (the main region where the bramble grows). For example, the powerful Vikings, who terrorized other peoples of the continent for decades, believed that this plant is capable of giving a person extraordinary wisdom, insight and even help him to look into the future. But, for example, in the culture of ancient Israelites, the turn personified difficulties and obstacles. It was connected precisely with the fact that it only allowed those who would venture through the spiny branches to reach the fruits.

Nowadays, the pulp of the turn is actively used for cooking various dishes. Fruit jelly, juices, jams, jams, pastilles, jams and other delicacies with its inclusion turn out to be extremely tasty. And we now offer you to try to cook a delicious compote for the winter from the turn!

So, in order to make it, you will need two kilograms of berries, 900 grams of sugar, and also about two liters of water.

First, you wash the fruit in cool water. It will be better at this stage to select the most juicy and ripe ones. But overripe or damaged berries should be removed immediately, as they will affect the taste of the finished compote in the best way. If you do not like bones, you can take them out at the same stage.

The next step is how to prepare the compote for the winter from the turn - getting the syrup. To do this, put water in the pressure cooker or pot, put the container on the fire and dissolve all the sugar in it. To compote from the turn for the winter turned out good, stir the syrup regularly - this will prevent caramelization of sugar. The finished syrup should be homogeneous, not too thick and not too liquid.

At the end, the banks are cooled naturally and put in storage in a dry and closed from the light place, for example, in a pantry.
