What is powdered wine and how to define it?

Concentrated and reconstituted juices do not surprise anyone today. Almost 100% of the drinks that are sold today in stores, it's just dilute concentrate. That is, initially the juice was thickened, so that its transportation became more convenient, and then diluted with water. With this, everything is more or less clear. Do you know what a powder wine is? This is an active model of modern winemaking, which allows you to get a lot of inexpensive raw materials.

Have you ever been surprised by the abundance of wines in the shops? Surely, each of you wondered if they are really natural. And what is powdered wine, for sure will interest fans of this drink.

Technology of preparation of grape wine

Let's first recall how a classic drink is made. Natural table, dry, semi-dry and semisweet wines are prepared only by fermenting grape must. And in the process are not added ethyl alcohol and concentrates. Thus, if you are reading about natural powdered wine, then there is clearly something wrong.

We can assume that it is a question of producing wine from concentrated, dried, and then diluted grape juice, but more often than not it is not so. Wine material is fermented grape must, that is, juice that has been processed and stabilized. It is impossible to make a concentrate from this alcohol-containing raw material, in view of the low boiling point and, consequently, the high volatility of the alcohol.

Almost natural

Above we described how the preparation of natural grapes in the original takes place. However, this drink is produced not only in the southern countries where vineyards grow, but also in the northernmost regions where vine can be grown only in greenhouses. What is raw material here? Of course, grape must is difficult to carry, because of the need for large volumes, so it is used precisely evaporated and dried grape juice. On the spot, it is bred with water and then brewed.

Such production is a violation of the technological process, the output is "natural" powdered wine, which professional winemakers contemptuously call "zalipukha." However, for a common man, it is practically impossible to distinguish it from the present.

Wine without wine

However, there is another kind of beverage on the market that is sold under the brand of wines. Immediately specify that it is difficult to determine by the bottle which wine is powdered. There are indirect signs about which we will talk further, but these are only guidelines. It is not always possible to determine a fake and taste. The only exception is specialists, tasters and true connoisseurs who can appreciate the color and aroma of the drink.

In fact, it is a mixture of alcohol, flavors and water. There is no use for the organism from him. On the other hand, if the manufacturer uses quality ingredients, there will be no harm.

Pros for the manufacturer

Of course, powdered wine is much more profitable. Significantly simplifies the process of transporting raw materials, it becomes cheaper logistics, and therefore, you can produce more than the final product in record time.

The evaporated grape juice with the addition of alcohol, yeast and flavors does not require special storage conditions. The final drink is not "sick", not covered with a film, but it also does not ripen. That is, years will pass, and it will not get better, as it happens with quality wine. It is clear that the most low-grade beverage - a mixture of alcohol, dyes and flavors - is a cheap fake, which can not be called wine.

We examine the bottle

There are a number of points that need to be addressed. True, none of them directly says that before you a natural product, but indirectly still indicates this:

  • The label must contain all information about the producing country, the plant where the wine was produced, its composition, and the alcohol content.
  • The date of manufacture is necessarily present on the label, and it is stamped on the label separately, and not printed in a common field.
  • The label must be executed at a high level. Blurred picture is not valid.
  • Discard immediately the purchase of inexpensive wine in an unnecessarily ornate bottle. In this case, the manufacturer puts more money into the packaging and takes little care of the quality of the product.

Now turn the bottle to light and turn it sharply with the neck. The presence of a large amount of sediment should cause suspicion. A small amount of it can be in quality wine, but such a suspension will quickly settle.

Be sure to pay attention to the cork. It should not crumble and smell bad. These are the first signs that the drink was not properly stored or was spoiled.

Express diagnostics

If you are going to present the bottle as a gift, it is very important that the drink is really natural. So let's talk about how to distinguish powdered wine. Attention to the label. Powder surrogate can not be aged or vintage. There is also no dry artificial wines. That is, it is better to choose a gift from this category.

If in doubt, take one bottle for testing. Pour a little drink into a wide glass. When it rotates, there must be "paths" on the walls. They are called "wine legs". The longer they stick, the better the wine is considered. Moreover, the thinner they are, the older the drink. This is the first way how to distinguish powdered wine from natural wine. There are many of them, although, we repeat, any of them does not give 100% of the result.

The most reliable way

Close the bottle with a stopper and shake it well. It is required to shake it vigorously to form a foam. Now fill the glass with wine. Here again we remember physics. Depending on the density of the drink in the bottle, the foam will behave differently. A natural drink forms a beautiful hat in the center of the glass. At the edges of the foam is not going at all, in addition, it falls very quickly. If you observe such a picture, then you can be sure that you have natural wine in front of you.

If it was based on water with concentrates and flavors, the foam instantly disperse around the edges, adhere to the walls and stay for a long time. In this case, it is not necessary to talk about naturalness.

Continue experiments

The next step is to analyze the taste of the drink. First of all, it is worth to appreciate the fragrance. In natural form it is rich, dense and rich. The drinks made from the reconstituted powder have a sharp odor, because they contain chemical flavors. Although without the preparation to distinguish this will be difficult - this is what the manufacturer expects.

Sip a little drink. Since it is very difficult to determine powdered wine of sweet varieties, try to avoid dessert drinks. All the flaws of taste in them are successfully masked by sweetness. But semi-sweet and semi-dry can be recognized by the aftertaste, which is absent in powdered wines.

Estimate the presence of dye

This wine itself has a rich color and does not need its amplification. Do a little experiment. You will need a glass vial from under the drugs with a wide neck. Be sure to choose a bubble with walls of clear glass. In addition, you need a clear glass of water.

Next thing for small. Fill the vial with wine and dip it into the glass, covering the neck with your finger. After that, the finger is removed and the result is observed. The density of natural wine is very different from the density of water. They will by no means be mixed without effort on your part. Falsified product is water with additives, so the liquid in the glass instantly turns red, pink or orange.

If you are looking for an easy way how to distinguish real wine from powder, then you can assume that you have already found it. If, after you have removed your finger, the water is clean and clear, then you have exactly the product made from grape juice.

Pharmacy Glycerin

There is another proven way how to distinguish a homemade wine from a powdered one. You will need a glass and ordinary glycerin, which is sold in any pharmacy. In the glass you will need to pour some wine, which needs to be checked for authenticity. It is enough 50-70 ml, the rest can be used for its intended purpose. Gently add about 10 ml of glycerin. Just a few seconds, and testing is over.

If glycerin smoothly descends to the bottom of the glass, without changing its appearance, then, before you natural wine. In powdered wine glycerin instantly changes color, it turns yellow or red.

Ordinary soda

Another proven way. To do this, take a glass of wine and pour some soda into it. Now carefully observe the reaction. In natural wine contains grape starch. These two substances will come into reaction, as a result of which you will see how the drink will change. Usually it gets greenish, grayish or bluish shades. Powder wine will not change.

We collect information about manufacturers

The most reliable way of determining how natural or powdered wine is before you is to inquire about the manufacturer and his products in advance. No serious company, which has been producing vintage wines for many years, will not engage in counterfeiting. Of course, such products are more expensive, but the quality is guaranteed to you.

Manufacturing plants that grow like mushrooms in recent times do not have their own raw materials and production capacities. Consequently, they will use surrogate raw materials and saturate the market with powdered wine. Pay attention to the cost. Low price means that you have an artificial product.
