Udon noodles - the queen of Japanese cuisine

We certainly associate Japanese cuisine with rice and seafood. If this is a Japanese restaurant, then there must be sushi and their varieties, as well as all kinds of salads with seaweed and side dishes from rice. But there is one more obligatory component of national dishes of this country - noodles. The popular and the widest variety of it is udon noodles. It is prepared and served in all sorts of ways: in boiled and fried, stewed and baked, cold in salads and hot in main dishes. The Japanese love her very much, and in our country she has long won universal recognition. What recipes can you try with this noodle?

Vegetarian noodles udon

Udon fits well with meat and vegetable ingredients, as well as with seafood. We offer to prepare several options. The first recipe is udon noodles with vegetables and soy cheese tofu. Cook the noodles (200 grams) for three minutes, in the meantime, heat the frying pan and pour oil into it. Lightly fry tofu (200 grams), after five minutes, add garlic and grated ginger (to taste), chopped champignons (15 pieces) and hot red pepper (half a pod). A little later - a leek, grated carrots (1 piece) and spices (1 spoonful): sugar, salt, soy sauce. Cook until the softness of mushrooms and carrots. A very hearty and tasty dish, which is perfect for lunch - udon noodles with chicken in a creamy sauce. For the preparation we will use chicken breasts (500 grams). They need to be cut into thin pieces and roll in spices. For this purpose, you can use seasonings for chicken and Provence herbs, as well as dry garlic, pepper and salt.

In a heated deep frying pan fry pieces of chicken in vegetable oil. By the time it takes no more than 15 minutes. In a separate pan at this time, udon noodles are cooked until ready. When the chicken is ready, add to it the cream (200 grams) and stew for another 10 minutes. Put the noodles on the dish first, and the chicken on top, then pour all the creamy sauce out of the frying pan.

Both vegetables and chicken are excellent ingredients for udon noodles, but they can not compare with seafood. The following recipe - udon noodles with shrimps and tofu cheese - is just a paradise treat. It is prepared as follows. Noodles (400 grams) are cooked until soft for 3 minutes and mixed in a bowl with eggs (2 pieces), boiled shrimps (6 pieces), leeks (1 piece), soy sauce (75 grams) and bean sprouts (quarter cup ).

On the heated frying pan, the tofu is lightly fried, then a mixture of noodles is added to it, everything is cooked for 4 minutes until the eggs are ready. Noodles with shrimps and eggs are laid out in a bowl, poured with lemon or lime juice and decorated with ground peanuts.

All you need is flour (2.5 cups), water (2/3 cup) and salt (teaspoonful). Dissolve the salt in water, pour the flour into a bowl and add all the water gradually. Then knead the dough for 10 minutes, wrap it in a food film and place it under a flat press to make a flat cake. Roll out a dough 3 mm thick, pour it with flour, fold three times and cut the noodles in strips of 5 millimeters.
