Zrazy is a meat dish that looks like a cutlet, in the middle of which there is a certain filling. Prepare this dish can be made from minced meat (fish, meat or vegetable). The filling can be used any, to your taste, the main thing is to get juicy and mouth-watering zrazy. The recipe of this dish in previous centuries suggested the preparation of food from a whole piece of meat, beaten, twisted and fried with a filling. However, it is much more convenient to make minced meatballs out of minced meat, that's why this variant of cooking has so caught on in modern cooking.

Zrazy. Recipe with mushrooms

Required products:

  • Mushrooms (500gr);
  • A kilogram of potatoes;
  • butter;
  • 2 onions;
  • Flour (3 tablespoons);
  • Garlic (2 teeth);
  • egg;
  • Half a glass of sour cream;
  • parsley;
  • Flour for dipping;
  • Pepper and salt.

So, we prepare zrazy. The recipe for a dish describes a simple cooking option. Bulbs finely chop them and fry them a little in oil. Next, clean mushrooms, wash well and cut into small pieces. Then transfer them to the onions, season with spices and fry in oil for 3 minutes. After that, add the purified garlic through the press.

Peel the potatoes, cut them into large pieces and boil them in water with salt. Then drain excess water and put the saucepan on the fire so that the water evaporates. After that, put butter, pepper and potatoes. After the mashed potatoes have cooled, add flour and mix well.

On a shallow plate, pour a little flour and put a lump of potato dough. Puree is recommended to collect with a wet spoon. Hand moistened in water, blend a cake of potatoes, in the center of which put the filling of mushrooms. Join the edges and, having well closed them, roll the potato bit in the flour.

Zrazes are roasted on both sides until a ruddy crust appears.

Serve with mushrooms and sour cream.

To prepare a dish, you need the simplest products:

  • 10 potatoes;
  • One and a half glasses of flour;
  • Head of white cabbage;
  • carrot;
  • Tomato paste;
  • butter;
  • Greens and spices.

Preparation

Peel the potatoes and boil them in salted water. Then rasstolkite it in puree and a little cool. Gradually pour the above amount of flour into the potatoes and mix the dough out of it.

Cabbage chop, put into a frying pan with grated carrots and simmer with the lid closed for 20 minutes, at the end add salt.

Blind a small-sized ball of potato dough and slightly flatten it to make a lozenge. In order for the dough to not stick to your hands, dip them into the flour. In the middle of the potato cake put the stuffing from the cabbage, protect the edges and form a patty.

Zrazy fry on both sides in a pan and serve with sour cream.

Products for cooking:

  • 800gr. fish fillet;
  • carrot;
  • 100 gr of wheat bread;
  • bow;
  • egg;
  • Milk (100ml);
  • 300gr. Fungi;
  • 2 boiled eggs;
  • 40 gr. Green onions;
  • 40 gr. Dill;
  • Corn flour or bread crumbs;
  • Pepper, salt;
  • sunflower oil.

Preparation

Wash the fillets in cold water, dry and pass through a meat grinder. Bread soak for a while in milk and squeeze. In a container with fish, put the grated carrot, half of finely chopped onions (onions), soaked bread and egg (raw). Fish minced pepper, salt to your liking and mix well.

Cut the mushrooms into cubes. Heat the sunflower oil in a pan and fry the second half of the chopped onions and mushrooms (8 minutes). Cook boiled eggs with a knife, greens (onion and dill) finely chop. Stir fried mushrooms with chopped herbs, boiled eggs, and add salt and pepper.

From the minced fish, make cakes, put mushroom fillings in the middle of each of them. Pinch the edges gently and form the cues.

Fish zrazy in breadcrumbs for breading or corn flour and fry in oil.
