"Tsarsky" cake: a recipe with a photo

This delicious cake came to us from France. In the original, its name sounds like "gato royal shokolya." And he came from a ritual cake, which was baked on the day of the worship of the Magi Kasper, Baltazar and Melchior (three kings). The holiday is celebrated in the Catholic tradition of the sixth of January. Previously, the beans were put in a dough, and to whom it was taken in a piece of cake, he was lucky all year. Well, then chocolate appeared. And the recipe for "Royal Pie" was transformed into an unusually tasty cake. And now they enjoy not only on holidays. We suggest you also bake a cake "Tsar". But that's not all. The basis of the cake is an aerated chocolate mousse!

First step. We bake almonds

The "royal" cake came from a ritual biscuit. And by tradition the dough for it should be almond. It is good to have nut kernels, already ground to the state of powder. If you do not have almond flour , you will have to tinker. It is necessary to scald with boiling water of a nucleolus, to remove from them a brown skin, and then to grind in a blender. Take 75 grams of almond flour and mix it with 90 g of powdered sugar. In another container, whisk two or three egg whites to firm peaks. Add in them 35 grams of powdered sugar. We continue to beat for another ten seconds. And only then we mix both masses. Turn the oven on for 160 degrees. We put the baking tray on parchment. Almond dough is better to put in a confectioner's bag, but you can do without it. Gently squeeze (or spread out with a spoon) on the parchment paper two cakes with a diameter of 20 centimeters. We send the baked to golden color.

Stage two: we make chocolate mass, cream and mousse

First we'll make whipped cream with sugar powder. They should be a lot (480 grams for the "royal" cake and another 240 g for glaze). We remove the whipped cream in the refrigerator. We are burning 40 g of milk chocolate on a water bath. We add 80 g of biscuit biscuits, crushed into crumbs. We put in this mass and 160 grams of chocolate paste like "Nutella". We mix everything well. Out of 70 grams of sugar and a quarter of a glass of water, we prepare the syrup. Even hot pour it into egg yolks and whisk at high speed. This slightly viscous mixture is poured into melted black chocolate (240 g). Mix and add chilled whipped cream.

Forming a cake

So, we have: two almond cakes, chocolate pastes and mousse. Now it's time to put together the "Royal" cake. Let the first cake stay on the parchment. We install on it a cake mold. Lubricate the cake - and a pretty thick chocolate paste. Fill all the voids between the cake and the first layer of mousse, which is gently squeezed out of the confectionery bag. We put without pressure the second cake. Repeat the whole procedure. First, paste, then chocolate mousse. Align its edges with a knife.

Make the glaze

Soak six grams of gelatin for ten minutes in cold water. Bring to a boil 30 grams of milk and sugar. Add 60 grams of cocoa powder. Stirring. Gently enter the remaining whipped cream. Sixty grams of dark chocolate is broken into pieces. Fill the creamy mixture with cocoa. Stir until the chocolate dissolves completely. Finally add the swollen gelatin. Mix again. We get out of the refrigerator our "Royal" cake. We remove the ring. Sprinkle the top and sides of the cake with chocolate glaze. We level the surface with a knife. And at will we decorate.

Chop into small pieces of 100 grams of butter. We put on the fire a saucepan with two tablespoons of honey and one teaspoon of baking soda. After two minutes the mixture will foam and become a beautiful golden color. Remove the saucepan from the fire and add butter and half a glass of sugar. Stir until homogeneous. When it is a little cool, we drive two eggs into it. Mix again. And we begin to sift in a saucepan a glass of white flour of the highest grade. From time to time we knead the dough. It should turn out to consist of a very thick farmer's cream. As in the previous recipe, we will squeeze out the dough onto a baking sheet covered with cooking paper. And bake honey at a low temperature for about twenty minutes.

Cooking cream

To make honey royal cake, the recipe suggests using sour cream. But first we shall soak in a warm water a handful of prunes and we shall roast on a dry frying pan 100 grammes of nucleoli of a walnut. Then cut the dried fruit into small pieces. The nuts are shaken in a mortar or a simple rolling pin. Pound fatty sour cream mixed with sugar to taste. We put it in the refrigerator. If you do not grab it, you can whip it up a little, but you better not do it. In one part of sour cream add prunes, in the other - nuts. Leave only a few nucleoli and dried fruits for decoration. The third part of the cream is left without additives. We cut the cortex lengthwise into two equal parts. First, lavishly spread the cream with prunes. We'll wait until it absorbs. From above we will place a cream with nuts. We will cover with the second cake. Let's slip our masterpiece from above and from the sides with pure sour cream. We adorn the nuts with kernels, prune slices. Put in the refrigerator for impregnation for at least an hour.

Variations on the theme ...

And now try a little digression from the classic recipe. First we prepare impregnation from half a can of condensed milk and 100 grams of sour cream. We remove it in the refrigerator. For cream, whip 200 grams of butter with the remaining condensed milk. Two bananas are cleaned and kneaded in mashed potatoes. Add to the cream, which is also set to cool in the refrigerator. Do the dough in the same way as in the previous recipe. But the resulting cake is divided not into two, but into three parts. Lubricate them first by impregnation. Then, after a while, - cream. We impose it more intensively. We decorate our cake "Tsarsky". The photo shows that you can not restrict your imagination here. And not only in decoration.
