Strawberry cheesecake

If you want to prepare for dessert something original, tasty and not too troublesome, pay attention to cheesecake. Unlike regular pies and cakes, this dessert consists mainly of curd or soft sorts of cheese, which makes it not too high-calorie and very useful. It's not for nothing that cheesecakes are very popular in European and American cuisines. This dessert is perfect for both a Sunday lunch with your family and a festive feast with friends.

To taste, this dessert is a bit like a cottage cheese casserole, but much spicier, airier and more original. The basis of cheesecakes is quite simple, as a rule, it is either a cookie mixed with butter, or a baked sandy dough layer. But the filling of dessert presents the housewives full freedom for a flight of fantasy: chocolate, caramel, various berries and fruits, combining several kinds of filling in one dessert and other culinary fantasies.

Spring has come and the strawberry season is coming closer, and this is an excellent occasion to start your acquaintance with such a wonderful dessert and make a strawberry cheesecake. Use one of our recipes for this.

Strawberry cheesecake: recipe with almond cookies

Almond cookies give this cheesecake an exquisite taste.

Ingredients:

  • 3 tbsp. L. Butter;
  • 150g of almond cookies;
  • 2 yolks;
  • 400-500 gr. Cheese Mascarpone;
  • 1 tbsp. Cream;
  • 500 gr. Strawberries;
  • 5 tbsp. L. Honey;
  • Pinch of cardamom;
  • 4 sheets of gelatin.

Cookies crumble, add ghee in it, as it should be kneaded. Put the dough in a mold, level it and leave it in the fridge.

It's time to start stuffing. Leave gelatin in cold water for 10 minutes. Cut half the strawberries and mix the mass with the honey. Mix the yolks with half the vanilla syrup, after whipping, add the cheese to the yolks, then the strawberries. Cream whisk with cardamom and mix with the remaining vanilla syrup, leaving one spoonful. Mix both whipped masses and gently mix.

Gelatine wring out, dissolve in the remains of warm syrup and, stirring, pour into cheese mass. Pour the filling on the base and put in the refrigerator until the filling thickens. Chilled cheesecake garnish with the remaining strawberry slices.

Strawberry cheesecake: recipe for a couple

Since this version of cheesecake is made without the basis of a cookie with butter, it is completely safe for your figure and can be considered a dietary dessert.

You will need:

  • 200 gr. Strawberries (you can take a frozen one);
  • 4 protein;
  • 200 gr. Cottage cheese;
  • 4st. L. Sahara;
  • 1 tbsp. L. Starch;
  • 1/2 teaspoon of lemon;
  • A whisper of vanilla.

Mixer mix strawberries, cheese, sugar, zest, vanilla and starch until smooth. Beat whites well. Gently lay a quarter of the whipped proteins in the strawberry mixture, mix thoroughly, then slowly enter the remaining proteins. Transfer the resulting mixture into a mold, from above lay a layer of thin strawberry slices. Cover the form with cooking foil.

Place the form in a steamer and cook over slowly boiling water. After 20 minutes, open the lid and leave for another couple of minutes. Take the cheesecake from the steamer and let it cool for a few hours in the refrigerator.

Strawberry cheesecake with orange

This variant of cheesecake will be especially liked by fans of baking using citrus. The orange muffles the sweetness of the strawberry and creates a mild taste - the strawberry cheesecake does not turn out sugary.

Ingredients:

  • 50 gr. Butter;
  • 180 gr. Crumbs of shortbread cookies;
  • 225-350 gr. Strawberries;
  • 100 gr. Sahara;
  • 1/2 peel of orange;
  • 350 gr. Cottage cheese;
  • 1st. Cream;
  • 0.5 tbsp. Yoghurt without dyes;
  • 4 tablespoons Orange juice;
  • 1 protein;
  • 3 sheets of gelatin;
  • Vanilla flavor to taste;
  • 50 ml. water.

Stir the cookies with butter, put the base in a pre-greased form. Align the base and bake for about 10 minutes in the oven at 180 ° C.

Leave gelatin soaked in cold water. Two-thirds of the strawberries with a fork, add a lot of juice and orange peel. Cream a little whisk and mix with cottage cheese and yogurt, add sugar and vanilla essence, mix everything thoroughly, enter the strawberry-orange mixture into the curd mass.

Gelatine wring out, dilute in warm water, let it cool slightly and pour into the curd mass. Whip the protein into a foam and gently enter it into the curd and berry mixture. Fill the prepared stuffing onto the cooled corn and smooth the surface. Cover the cheesecake with food wrap and leave in the refrigerator until it hardens. Before serving, decorate the dessert with the remaining strawberries. Strawberry cheesecake is ready!
