The bright holiday of Easter has long been celebrated in Russia, being a symbol of the revival and triumph of the forces of life. In ancient Russia, at this time celebrated the arrival of spring, the beginning of a new cycle of agricultural work, asked the gods for a good harvest. With the advent of Christianity, these traditions receded into the background, and the celebration itself acquired a new meaning. Henceforth, they began to celebrate the resurrection of Jesus Christ, which occurred on the third day after he was crucified on the cross. The date of Easter every year is calculated according to the lunar calendar. However, it always falls on the first Sunday, which comes after the full moon following the spring equinox.

The Easter table is rich and varied. It was believed that the more abundant the table for Easter, the more generous the harvest will be. The peasants necessarily kept the colored eggs that had been fed for Easter until the first day of sowing and took them with them to the field so that everything sown would give good seedlings. In addition to the painted and often painted with sacred symbols of eggs, it is customary to serve the Easter table with rich, beautifully decorated cakes and curd pastur.

Curd Easter is a special dish, resembling its shape truncated pyramid. Every housewife, of course, has its own, proven recipe for cheese curd, but always use well-curd cheese, eggs, butter or cream, sour cream and sugar to make it. Curd paska (Easter) symbolizes the Holy Sepulcher. She was replaced on the Easter table of the sacrificial lamb, as if to say that the time of the bloody sacrifices was over. The letters "ХВВ", which are the abbreviation of the phrase "Christ is risen" and the image of the cross are put on the sides of the pasque. These signs indicate that Christ sacrificed himself, instead of the Passover lamb and the need for new victims is no more. Earlier, even a lamb cooked from butter, cottage cheese and sugar was served at the table, however, at present, preference is still given to the curd pasta.

An unusual recipe for cheese curds is a custard pascal.

For the recipe you need: 700 gr. Cottage cheese; 250 gr. Sour cream; 50 gr. Oily cream; 125 g. Soft butter; 50 gr. Sahara; 2 eggs; 50 gr. Raisins; salt.

For decoration: almonds; Colored candied fruits; Grated chocolate.

First you need to wipe the cottage cheese through a fine sieve, and best of all, do it twice. Simultaneously, pour boiling water over the raisins and leave for half an hour to steam.

Put a soft butter in the pan, put in one egg, cream and sour cream and, on a small fire, bring everything together to a boil, stirring constantly. Then pour the hot mixture into the wiped cottage cheese and carefully grind, so that there are no lumps.

The second egg is mixed with sugar and salt, add to the curd mass, there also put raisins and mix everything.

Next, the preparation of the curd paste is as follows. Special form should be lined with 3-4 layers of gauze. Lay out the prepared mass in the mold, press it firmly with hands, after which, cover the edges of the gauze and put the load on top.

Put the pacifier in the refrigerator for a day. Then get the pas from the mold along with the gauze, and turn over to the dish. Gauze to carefully remove and decorate the pask with ornament from almonds, and candied fruits. Top with sprinkled with grated white and black chocolate.

Preparation of curd paste is impossible without a special form, in which it is placed to separate excess liquid. The traditional form (or pasochnitsa) is wooden and consists of four separate trapezoidal plates. Two planks have ears on each side, and two more planks - cuts under these ears. To the pasochnitsa not disintegrate, in the ears make additional holes, which are inserted small wedges. The form for the curd paste on the inside is necessarily decorated with a cross and the letters "ХВ". Also, images of spears, wheat ears, sprouts and flowers, as symbols of the Resurrection and new life, can be used here. At present, the pasochnitsa can be made of plastic. If there is no ready-made pasochnitsa, you can use a salad bowl of suitable form, plastic buckets from under mayonnaise and even an ordinary grater, laying it from the inside with food film.
