One of the traditional vegetable blanks for many domestic housewives is the Kuban salad. The only component, mandatory in all recipes - is juicy ripe tomatoes. It is thanks to them that the dish turns out so bright and colorful.

Kuban salad for the winter with cabbage

The prepared dish can be laid out in liter jars or you can choose a smaller volume at your discretion. For a kilogram of cabbage, take 4 kg of tomatoes, 1.5 kg of Bulgarian pepper (best if it is colorful, then the dish will become more colorful) and 1 kg of onions. It will also require half a liter of refined vegetable oil, one and a half cup of vinegar, salt and sugar to taste, a handful of black peppercorns and several laurel leaves.

Kuban salad for winter is cooked in a large container, where it will be convenient to mix all the ingredients and continue to cook them. And start the process with cleaning vegetables. Then they all need to be cut. Cabbage - thin straws, Bulgarian pepper - too, onions - semirings, and tomatoes - cubes. Vegetables mix and mix, salt, add sugar, vegetable oil and spices, and then put on fire. In the process of heating, the ingredients must let the juice in, which will not allow them to burn. As soon as the salad boils, vinegar is poured into it, boiled for several minutes and spread over clean cans. It is desirable to additionally sterilize them for 10 minutes, then tightly close, cool and send for storage in a pantry or cellar.

Kuban salad: recipe with cucumbers

Another, no less delicious and colorful version of the preparation of this dish includes the ingredients from the previous one, but it assumes the availability of additional components. For 5 kg of ripe tomatoes take a kilogram of bell pepper, cabbage and onions, 1.5 kg of cucumbers and 500 grams. Carrots. Still need green (a pair of beams), a glass of salt, oil and vinegar. From spices, you can use bay leaf and peppercorn.

Kuban salad for the winter in this version is also prepared by cutting all vegetables and further mixing them, but only heat treatment is carried out directly in the banks. That is, the packaging into which the components will be placed can be taken plastic. Ingredients are cut in the same way as the previous recipe. Cucumbers usually cut thin semirings, greens - as small as possible, and carrots can simply be rubbed. Salt, vinegar and oil are added directly to a bowl of vegetables, and pepper and bay leaf to each jar. Then the salad is rammed into them, leaving a little space on the top for juice (it will stand out during cooking). Banks (liter) are sterilized for half an hour, after which they are closed.

Those who do not like this vegetable or think that it is also available in winter is advisable to use the following recipe. All products are taken in equal proportion by weight (tomatoes, bell peppers, onions, cucumbers and carrots) - per kilogram. Vegetable oil will need 500 ml, and salt, sugar and vinegar - 2 spoons. For sharpness, you can add a little bit of hot pepper. Prepare a salad in a large saucepan, pour oil and fry the cleared carrots, cut with straw (you can use the grater). After 15-20 minutes, the same shredded Bulgarian pepper is sent. After the same time - bow semirings. Salad should not forget to constantly stir. In the end, add the tomatoes (dice), which should let the juice, and after 10 minutes cucumber (semi-rings). Next is the turn of sugar, salt and vinegar. After 15 minutes the salad will be ready. It should be placed in sterile cans and closed. They can be stored for 2-3 years. But, as a rule, by spring there is nothing left from stocks.
