Despite the fact that nutritionists insist that the combination of potatoes and meat contributes to a set of extra pounds, many continue to gladly eat such dishes. Virtually all peoples can find recipes from minced meat and potatoes. Dishes on them turn out to be harmful for the figure, however, this is no less delicious. First of all, they are draniki, zrazy and, of course, sorcerers. The latter are especially fond of cooking in Belarus, Western Ukraine and Poland. In this case, each nation has its own interesting variant of preparation.

Sorcerers from Belarus

It is in this country that sorcerers from potatoes and minced meat are considered to be their national dish. Perhaps, because Belarus is the largest producer of potatoes. Or maybe just for the reason that the local housewives they are especially tasty and resemble draniki stuffed with meat. Actually, according to the method of preparation and appearance, Belarusian sorcerers very much remind them.

Required Products

For the meat filling you need to take:

- 400 grams of pork with fat;

- 2 middle heads of onions;

- salt, ground pepper and other spices to taste.

You will also need:

- 12 pieces of potatoes;

- egg;

- 1-2 tablespoons of wheat flour (the less, the more gentle the sorcerers will be);

- 2 large onions;

- 1 tablespoon of sour cream;

- 100 grams of smoked bacon;

- ground pepper, salt;

- vegetable oil for frying.

How to cook sorcerers with minced meat in Belarusian?

Their preparation begins with a meat filling. Skip pork through a meat grinder. Onions cut into strips and fry in vegetable oil until it turns golden. Add together with ground pepper and salt (if desired, you can put other spices) to minced meat and mix well.

Now you can proceed to the potato mass. The tubers are well washed and cleaned. Then grate on a large grater. It is advisable not to be too lazy and do it manually, since the processor or vegetable cutter crushes the potatoes, and too much juice is allocated. Press the resulting mass is not necessary. Add a grated onion, egg, sour cream, flour, ground pepper and salt. It should be noted that thanks to sour cream, the potato mass will remain white. Also do not abuse flour. The less it is, the more gentle the sorcerers will be in the end. Mix all.

Preheat a frying pan with vegetable oil. Spread a tablespoon of potato paste, then a bit of minced meat and close the filling with another tablespoon of grated potatoes. Fry sorcerers with minced meat from two sides to a characteristic golden color and put into a saucepan with thick walls. Put in the oven for 15-20 minutes at 180 degrees and bring to readiness. Transcarpathian sorcerers

But in Western Ukraine, sorcerers are prepared completely according to another recipe, in which there is no potato. Outwardly, they are more like a cake and are thin pancakes made of spinach, interlaid with meat stuffing and mushroom sauce. At the same time Transcarpathian sorcerers with minced meat are not less tasty and aromatic. In addition, to prepare them, it will not take much time and effort.

What is required?

To prepare spinach pancakes you need to take:

- 3 chicken eggs;

- a teaspoon of sugar;

- a pinch of salt;

- 250 grams of wheat flour;

- 50 grams of spinach (you can take and frozen);

- 300 ml of milk;

- a tablespoon of olive oil;

- water for boiling spinach.

For meat filling it will be required:

- 600 grams of low-fat pork;

- onion;

- 3 tablespoons of fatty cream;

- vegetable oil for frying;

- Pepper and salt to taste.

In the end, you still need to prepare a mushroom sauce made from 100 grams of chanterelles or other forest mushrooms, 1.5 cups of fatty cream, ground pepper and salt. Of all these products, you can make such appetizing sorcerers, a recipe with photos of which will decorate any culinary magazine.

Cooking procedure

First you need to bake green pancakes. And the first thing to do is boil spinach for them. To this end, boil the water, lower it for 2 minutes and recline it in a colander. Transfer to a cup, add 1 cup of broth and grind with a blender. Leave to cool. Meanwhile, beat the eggs with salt and sugar, pour half a glass of milk and pour in the flour. Stir well and add the remaining milk without stopping stirring. It is very important that there are no lumps in the mass. Then add the spinach puree and olive oil and mix. Preheat the frying pan and press the pancakes.

Next, you need to make a filling. By the way, by the way, it will also differ from the one that potatoes put in sorcerers. Pork cut into medium pieces and fry in vegetable oil until the meat is light brown. Then add the onion, chopped into quarters, and fry until cooked. Sprinkle salt and ground pepper. Get the fried roast through a meat grinder, pour the cream and mix.

It remains only to prepare the sauce. Forest mushrooms (chanterelles, white or others) boil in boiling water for 15-20 minutes until half cooked. Then fry in vegetable oil until ready. At the end, add a piece of butter and cream, pepper and salt. Bring the sauce to a boil and turn off the heat. In this recipe, it is better to abandon the mushrooms, since they do not have such a pronounced mushroom taste. Now you can start assembling wizards.

Put a pancake on the plate, then mince and a little mushroom sauce (only liquid, without the mushrooms themselves). And so alternate the layers until the products, except the mushrooms, run out, of course. The last should be spinach pancake. In the Baltics, which is located next door to Belarus, of course, sorcerers from potatoes with minced meat are prepared according to their own recipe. They are distinguished by a delicate taste due to the potato tinder on a small grater, and ready sorcerers are stewed in a creamy sauce. At least for this reason, you can try the local option.

For the potato mass, you will need:

- 2.5 kg of raw potatoes;

- a glass of flour;

- egg;

- ground pepper;

- salt.

For meat filling:

- 600 grams of stuffing;

- 2 large heads of onions;

- Spices to taste.

First you need to grate all the potatoes on a fine grater. At first glance, it will be a lot, but that's exactly what you need. It's good to squeeze all the juice through the gauze. The mass should be very dry, practically devoid of liquid. But it does not need to be poured, it is useful for making sauce. Then add the egg, spices and salt to the potato. Mix. Gradually add flour until the dough becomes sticky and will not keep the shape.

Now you can do the stuffing. For her, chop the onion with a blender or grate. Add to the stuffing with spices and salt. Mix well. You can take any meat - not only pork or beef, but also chicken. In any case, it will be sorcerers from potatoes with minced meat. It remains only to blind them.

Take a little thick potato paste, form a flat cake and put meat stuffing in the center. Blind edges, like pies. It is good to roll in breadcrumbs and fry on both sides until they turn golden.
