It should be noted that with all its diversity and all its positive qualities, the drinks offered today in the shops are mostly not very useful for health. The fact is that manufacturers in pursuit of profit try to increase the shelf life of their products, adding preservatives to them. Another thing natural juices - derived from natural products, they are able not only to give pleasure from eating, but also to give the body a wide range of vitamins and trace elements, which is so necessary to maintain human health. This is especially true of birch sap - a drink that has been used as a medicine since ancient times. Many remember the taste, but do not know the recipe for birch sap, but it is not as complex as it might seem at first glance.

So, the recipe for birch juice includes several stages. Firstly, it is harvesting of birch sap. Harvesting is carried out in early spring, when the leaves on the trees have not yet blossomed. It should be noted that the billet should be produced only in ecologically clean areas, away from roads and industrial facilities. In addition, in order to obtain birch sap, only adult trees with thick trunks are suitable - in this case, the yield of juice is greater, and the tree is less harmed.

Drill holes or pound the bark better higher, not near the ground. In this case, the resulting juice will be more fragrant and sweet, although it will get a smaller amount. In addition, the low position of the podiums, causes more damage to the birch. After the holes are drilled, or the pants are made, a tube or a tray of wood is inserted in them, so that the juice drips down into the substituted or suspended capacity. Here's a simple recipe for birch juice, or rather, its billets. Do not forget to heal the tree, after the leakage of juice stops - to hammer into the hole a wooden peg, and also to cover the damaged surface of the tree with clay.

Then the next stage is the conservation of birch sap. It is clear that in order for the recipe for birch sap to make sense, the finished product should be stored for as long as possible. Preservation of birch sap is easy to do at home. To do this, pour the juice into a saucepan, add sugar and citric acid to it, after which the juice is brought to a boil and dissolving the sugar. After that, the juice in the hot state is filtered and bottled. Bottles are clogged and for complete sterilization are kept in water at a temperature of 90 degrees for 15 minutes.

There is another recipe for birch juice, which implies fermentation. Fresh juice is filtered through gauze and, without additives, is poured into clean barrels or large glass bottles. After pouring the containers are closed and sent to a cool, dark place. After a few days, fermentation will begin, and the juice will acquire a sour taste, and also become more turbid. In this state juice can be stored until the middle of summer.
