For 6 servings you will need: 800 g of pink salmon fillets, one and a half kilograms of potatoes, half a liter of fish broth, 50 ml of cream, 75 ml of vermouth or white dry wine, yolks from two eggs, pepper, 50 grams of oil, salt to taste.

For the sauce you need to take: 2 pieces of shallots, 250 g of shrimp, 2 tablespoons of flour, 2 tablespoons of dill, 150 ml of cream, 40 g of butter, 3 spoons of capers.

Potatoes should be washed, peeled, cut into small pieces, put in salted cold water and cook for about 20 minutes. At this time, cut the fish into slices about 3 to 4 cm wide. Fold it in a low large pan, pan or in a saucepan. Pour the fish with wine, which must be mixed with fish broth or with hot water and brought to the boiling point. It should be cooked all this for 7 minutes on a small fire. Transfer the prepared fish into a ceramic two-liter baking dish, draining the liquid into a separate bowl.

While the pink salmon is being cooked in the oven with the potatoes, we prepare the sauce.

We must melt the butter in the pan. Add there shallots, fry for 3 minutes, until it becomes soft. Add the flour to the fried onion and continue cooking for another minute. Gradually add the liquid that was released from the fish, and simmer further on a small fire for 5 minutes, add more cream, capers, shrimp, dill, mix everything and cook for 1 minute, then season with black pepper, salt, then pour the resulting pink salmon sauce in the shape of.

Drain the potatoes. Then put the pot again on a small fire and make a mashed potatoes, adding gradually to it the remains of cream, salt, yolk, butter. When the mashed potatoes are ready, put it on the fish with a spoon and crush it with a fork. Buckwheat roasted in the oven with potatoes for 30-35 minutes before the appearance of a crust of golden color.

The next course is about 45 minutes. In this case, the whole pink salmon is cooked, along with potatoes, tomatoes, celery, carrots and, of course, olive oil. It is served both cold and hot.

To prepare this dish, take:

1.5 kg of pink salmon (2 small or 1 larger), 2 large potatoes, 2 carrots, 3 cloves of garlic, 3 large tomatoes, parsley, 2 celery stems, lemon juice, salt, 4 tablespoons olive oil, black ground pepper.

First you need to prepare pink salmon. To do this, it must be washed under running water, cleaned of scales, cut off the tail and head. Next, you have to cut the fish belly, pull out all the insides and clean the cavity. Then the fish should be slightly dried.

Mix lemon juice with pepper and salt. Grate the prepared pink salmon from inside and on both sides with this mixture. Now put the pink salmon in a container that is sealed and put in a refrigerator for a couple of hours. So you will get juicy pink salmon in the oven.

Now prepare the vegetables. Tomatoes are well washed and cut into medium-sized slices. Wash potatoes, peel and cut into plates. Carrots, too, clean and cut into cubes.

Now take a pan for the oven and oil with olive oil, then spread on it plates of potatoes, a piece of parsley and cloves of garlic. Then put pink salmon and pour a little oil on it. Top with tomato slices. On the sides - cubes of carrots and stalks of celery. Pour oil again. Pour a small amount of hot water. Now put it all in the oven.

This pink salmon in the oven with potatoes is baked for about 40 minutes.

Remove the baking sheet with the salmon and sprinkle with the remaining parsley.
