Lemon lemon cupcakes with merengue and lemon kyrd

Caps - lemon, strawberry, cream and chocolate - are now popular with sweeties around the world. They first appeared in America. It happened in the century before last. Basic recipe

So, for a slightly modernized basic recipe you will need:

  • Mixed with baking powder usual flour - 2.5 cups.
  • Butter (creamy) - 200 g.
  • Sugar (it is better to use fine or even powder) - 1 glass.
  • Eggs - 3 pieces.
  • Milk is half a cup.
  • Vanilla extract - 1 teaspoon or vanillin on the tip of the knife.

Preparation

At the first stage, the soft oil is beaten with powder and vanilla. Then add the eggs to the mixture - they need to be introduced one at a time. The next step is the addition of flour and milk. They can be injected in parts, alternating between them, so that the consistency does not become too liquid or dry during the mixing process. When the mass becomes uniform, it is laid out according to the molds. You can use silicone, paper, ceramic or metal - this is not the point. The main thing, the last two types of dishes from the above options, pre-lubricate with oil. The molds are filled with a two-thirds test.

The capcas are baked for 15-20 minutes at 180º. Finished products are left for a short time in forms. Then they get, cool and decorate.

Lemon capcakes with meringue

A magnificent variant of decorating almost any kind of cake is a gentle meringue. The protein mass is applied to the surface of the capcas only after baking. And for the preparation of meringue you will need sugar (225 g) and proteins of three eggs.

The ingredients are mixed in a suitable container. On the stove put a pot of water for a water bath. The container with a protein mass should not touch the surface of a slightly boiling liquid. The sugar basis of the meringue is sent to a water bath and constantly stirred until it warms to 45 °. Then mix the mass with a mixer until strong peaks form. Using a confectionery bag merengoy decorate ready-made capkey. And send them in a preheated oven to 200º for about 4-7 minutes. The finished meringue will turn rosy and crispy from the outside.

Lemon Kurd

An interesting version of mini-cakes can be prepared if you use a kind of custard - Lemon Kurd. In it, traditionally used milk is replaced by lemon juice. Kurd is not easy to prepare a dish, but attention and a little patience will help you to quickly cope with it.

To make the cream, you will also need a water bath. Water should be quietly boiled and not reach the bottom of the main container about 2 cm in a suitable container, combine the sugar (3 tablespoons) and lemon zest (about 1 tsp) and grind. Then there are 2 medium eggs and juice of one lemon. The container with the contents is put on a water bath. The mass must be constantly stirred, gradually it begins to thicken. It takes about 7 minutes. The Kurd, reaching the consistency of sour cream, is removed from the heat and left to cool for 10 minutes. Then butter is added at room temperature, about 20 g, and everything is mixed. Kurd is ready.

Capcas with stuffing

In order to prepare a capkake with a lemon kurde, it is necessary to fill the cream with ready-made mini-cakes. For this purpose, a funnel-shaped or circular groove is made in each product with a knife. The main thing is not to damage the bottom. Holes are filled with a Kurd, and with the "extra" pulp cut off the tip. Then it is put on the cream in the form of a lid. Such capkakes are perfectly combined with merengue. The protein mass is applied over the lid. And the mini-cakes are sent to the oven for 5 minutes to make them brown.

Capcasks, a recipe with the photos of which are given above, can be boldly prepared for a holiday instead of the usual cakes. On the basis of the above description it is not difficult to make variants of muffins with orange or traditional custard.
