How to properly make "Gedli-brzhe": a recipe and options for cooking

One of the most popular dishes of Kabardian cuisine is Gedlijbrzha. The recipe for its preparation is well known to any local hostess. Usually without such a surprise there is not a single celebration. In fact, this original dish can be considered a true visiting card of the national cuisine of the Kabardians. Nevertheless, you can prepare it in many ways. As an illustrative example, it is worthwhile to consider several of the most interesting options.

Classic Edition

Those who love poultry meat should definitely like "Gedli-brzhe", the recipe of which was created by local Kabardian cooks many years ago. As a rule, its preparation requires:

  • Chicken carcass;
  • 1 onion;
  • salt;
  • paprika;
  • 2 cloves of garlic;
  • pepper;
  • 60 grams of flour;
  • sour cream.

The products are of the most usual type, but from them an excellent "Gedlijbrzha" is obtained. The recipe for its preparation is very simple:

  1. First, the chicken needs to be washed and then divided into small portions. To disassemble the carcass is better on joints, not using a kitchen hatchet. So you can avoid unwanted splinters of bones.
  2. Pieces of meat must be sprinkled with salt and peppered abundantly.
  3. After that, they must be folded into a deep pan and stewed under a lid exclusively in their own juice.
  4. Once the meat is ready, it should be lightly fried. For this extra fat is not required. It is enough that it was formed during extinguishing.
  5. Add to the meat finely chopped onion with garlic, flour and a little paprika. All this must be well mixed and passer.
  6. To introduce sour cream. Its quantity will depend on personal taste preferences.
  7. Pour products with water so that they are completely covered with liquid.
  8. Stew on low heat for 10 minutes.

It turns out an amazing chicken with a sauce that will not leave indifferent even a major specialist in culinary arts.

Full replacement

Some experts believe that it is not so necessary to prepare "Gedlijbrze". The recipe, in their opinion, should contain the following ingredients for one chicken:

  • ½ cup of broth;
  • 2 onions;
  • salt;
  • 200 milliliters of cream;
  • 4 cloves of garlic;
  • A tablespoon of paprika and pepper.

The way of preparing this dish is somewhat similar to the previous version:

  1. First, chicken meat should be divided into pieces, pepper, salt, and then fry them for 7 minutes in vegetable oil, constantly turning to avoid burning.
  2. Make a minimal fire and simmer under the lid for 25 minutes.
  3. During this time, a lot of juice is formed. It needs to be evaporated. To do this, remove the lid and wait until the meat and fat remain in the frying pan.
  4. Add chopped garlic with onions.
  5. Introduce the cream, and then pour all the broth.
  6. Gradually add the flour, stir the contents and cook for another 10 minutes.

Appearance and exquisite aroma of this dish already in itself cause appetite.

Alternative option

In the North Caucasus, locals are very fond of "Gedli-brzhe". The recipe in Kabardian has two separate cooking options. In the first case sauce with meat is cooked in one bowl, and in the second - separately. The result of this practically does not change. True, beginners mistress prefer the second option. It will require the following components:

  • Chicken weighing not more than 1 kilogram;
  • A glass of sour cream;
  • 3 onions;
  • 50 milliliters of sunflower oil;
  • 5 cloves of garlic;
  • 3 grams of ground red pepper and paprika;
  • 20 grams of salt;
  • A teaspoon of curry;
  • Parsley greens.

The preparation process consists of several parts:

  1. First, the carcass should be divided into pieces, and then fry them in boiling oil. After that, the frying pan should be covered with a lid, make less fire and continue processing for about half an hour.
  2. For the preparation of sauce, the first thing to do is to chop the onion, optionally with garlic, in vegetable oil. Literally in 5 minutes it will acquire a golden tinge. After that, the contents of the frying pan must be transferred to the blender and beat it in it until it is mashed.
  3. Add the remaining spice recipe, chopped greens and mix well.
  4. Put the mass in a deep saucepan or cauldron and pour the broth, and then add a little more water.
  5. Transfer to sauce the roasted meat and simmer for 15 minutes under the lid.

The best side dish for this dish is a tender mashed potatoes.

Original solution

Each hostess sees in her own way a certain dish. For her own version is the real chicken "Gedlijbrze". The recipe of one not absolutely usual variant provides the following set of products:

  • 1 kilogram of chicken;
  • 300 milliliters of milk;
  • bulb;
  • salt;
  • 3 cloves of garlic;
  • 1 processed cheese;
  • Any condiments.

This method is extremely simple, but original enough:

  1. Divide the carcass into portions. In this case, the pieces should not be very small. Then, losing a portion of the juice, they will become dry and not tasty.
  2. Pieces of chicken need, as usual, fry from two sides in oil. After that, they need to be transferred to a deep saucepan.
  3. Separately prepare the fill. For this, in the milk it is necessary to add crushed garlic with onion quarters onion rings, grated cheese and seasoning.
  4. Prepared mixture pour the meat and stew it for 20 minutes under the lid.

This recipe only remotely resembles the classic version, but it does not give way to taste at all.

Simple and tasty

There is one more interesting variant of "Gedibzhe". The recipe from the photo will help to understand it clearly. The following ingredients are used:

  • 600 grams of chicken (drumstick and thighs);
  • 30 grams of flour;
  • salt;
  • 60 milliliters of vegetable oil;
  • glass of water;
  • 4 tablespoons low-fat sour cream;
  • 150 grams of champignons;
  • 10 grams of parsley;
  • turmeric;
  • Ground black pepper.

Process description:

  1. Rinse and dried meat to salt and fry in hot oil. To form a crispy crust, you need at least half an hour.
  2. Randomly chopped onions to fry until golden.
  3. Blender it in mashed potatoes.
  4. Gradually introduce flour, turmeric and sour cream.
  5. Add salt, pepper, a little water, mix and pour into a deep frying pan or saucepan.
  6. In the mixture, put mushrooms cut into pieces, fried meat and simmer for 20 minutes, tightly closing the lid.

To this dish, garnish is almost not needed. It will be enough fresh vegetables and a few slices of black bread.
