How to prepare a salad with mushrooms and beans, squid and beans or herring and beans?

Beans - a product with high nutritional value (due to the high content of vegetable protein - 24%, magnesium, calcium and B vitamins), is perfectly combined with mushrooms, squid, herring and other products. They grow beans because of seeds and fruits, and some varieties because of the flowers, called Turkish beans. General recommendations for the preparation of any salad with beans: dry beans must be soaked for 10 hours before cooking. This helps to shorten the cooking process, and also remove some indigestible sugars (oligosaccharides) from beans that cause gas formation and make digestion difficult. Beans can be used to make soups or other dishes. For example, a salad with mushrooms and beans, as well as salads with herring or squid - delicious dishes with a large content of nutrients.

It is quite easy to make a very light and nutritious salad with mushrooms and beans. For its preparation you can take dry seeds or green pods of asparagus beans. For a salad choose products:

  • 4 cups green beans, fresh or frozen (they can be sliced);
  • 2 cups of champignons (buttons), cut into 4 identical parts;
  • 1 head of red onion, cut into half rings;
  • 2 cloves of garlic, finely chopped (do not press on the press);
  • 2 tablespoons olive oil;
  • 4 ripe cherry tomatoes, cut into 2 pieces;
  • To taste pepper and salt;
  • Juice of 1 lemon.

Salad with mushrooms and beans is obtained dietary, as it is prepared without mayonnaise or sour cream. Of the fats used a small amount of oil for frying mushrooms. Prepare the pods of green beans, to remove streaks (if any) and throw them into boiling, pre-salted water. Boil the young pods for 10 minutes, if the beans are already ripe, then 30 minutes. Drain the water and leave the beans in the air to cool and dry. Then the pods are cut into two parts. While the bean cools, in a large frying pan with hot olive oil, fry the onions (use a small portion of onions) and garlic, stir, remove from heat, set aside and allow to cool. Transfer the prepared green beans to a large dish, the onions are laid onions, cut into half rings. Top with mushrooms, fried with onion and garlic. Decorate with half a cherry tomato. Season with pepper, salt, pour lemon juice. Salad with mushrooms and beans is ready, it can be served to the table.

As a lean dish, a salad with squid and beans is prepared. This dish can also be served to the table as the main one. For preparation it is required:

  • 2 cups of dried white bean seeds, left overnight filled with cold water;
  • 3 clove of garlic finely chopped;
  • Salt food;
  • 1/4 faceted olive oil glass;
  • 625 g of peeled small squid, carcases cut into rings, tentacles cut into parts (length 2.5 cm);
  • 12 large sage leaves, cut into your own;
  • Flesh (without seeds) 1 tomato;
  • ½ teaspoon of chopped red pepper;
  • 1 tablespoon chopped parsley;
  • Fried pieces of bread (toast), rubbed with garlic and oiled with olive oil.

In a large saucepan pour a liter of 2 water and cook the beans in it, add the garlic. Bring to a boil, then on moderate heat continue to cook for 30 minutes, season with salt and boil for another 10 minutes. Drain the beans with water, leaving 1 ½ cup of liquid in stock. In a large deep frying pan, heat all the oil, spread squid and sage into it. Fry over moderate heat, stirring until the squid becomes white (it will take 5 minutes). Add the tomatoes, chopped red pepper and salt. Extinguish on moderately low heat, stir, the sauce should gently thicken (about 20 minutes approximately). To the mixture in the frying pan add the beans and the retarded liquid and stew for 10 minutes (the squid will be tender, and the sauce will become thick), pour the parsley. Dispense the prepared bread on the plates. For each piece lay a salad.

A dish suitable for a fasting is a salad with herring and beans. But you can eat it on ordinary days. This recipe requires ingredients:

  • 1 kg of potatoes;
  • ½ kg of salted herring;
  • 1 can of red or white canned beans;
  • 1 sour apple is cleaned and the core is removed;
  • 2 salted cucumbers, from which peel the skin;
  • 1 onion;
  • 2 hard-boiled eggs;
  • 1 clove of garlic finely chopped;
  • 3 tablespoons olive oil (post) or mayonnaise.

Herring is cleaned, if it is very salty, put in water for a while. If you do not need to soak the salt, then simply wash it with cold water. Remove the skin and remove the bones. Boil potatoes in a uniform, and then clean it. Dice the potatoes, herring, eggs, onions, apple, cucumbers. Grind the garlic. Season with pepper and salt, stir everything. Season with oil or mayonnaise.
