We need 2 yolks, 250 grams pancetta (fat brisket), half a kilogram of spaghetti, 200 grams of pecorino cheese, one teaspoon of oil, olive or sunflower, pepper, spices and salt to taste.

The essence of the unusual taste and delicate texture of the paste is that the spaghetti and the sauce must be combined together while the pasta is very hot, so that the sauce absorbs the heat from the hot spaghetti and comes to the ready. Let's start with the sauce. We pour oil on a heated frying pan, preferably olive oil, but if it is not there, then sunflower will do, and pour out pancetta. Usually spaghetti is cooked for about 10 minutes. Ready-made pasta does not require additional washing with water, as they must be as hot as possible. Ready spaghetti with two tablespoons quickly put into a bowl with sauce, mix and cover with a lid. From the heat that comes from the pasta, the cheese melts and the eggs thicken. The dish turns out to be tender and delicious. Serve the carbonara paste on the table only in a hot form to preserve its original properties.

How to prepare pasta with Bolognese

There are two types of cooking this dish. Today we will consider only one, the classic recipe for cooking Bolognese paste. This dish assumes a fairly wide range of ingredients, which makes the pasta exquisite and nutritious. We will need:

- half a kilogram of minced meat (half-pork and beef);
- smoked bacon in the amount of 200 grams;
- 2 carrots;
- 2 pcs. Onions;
- 2 stalks of celery;
- 3 small cloves of garlic;
- about 150 grams of red dry wine;
- tomatoes in the amount of 250 grams;
- 75 grams of cheese of hard varieties;
- 2 tbsp. L. Tomato sauce;
- a teaspoon oregano;
- spices, salt and parsley.

To prepare the sauce, it is necessary to pour the pre-cut bacon into the heated frying pan with olive oil. Fry it until it is browned. After that, we add grated carrots to the frying pan, pass for 5 minutes, add the onion and celery and again passer. There was a turn of forcemeat. To it we add garlic and fry for about ten minutes, stirring. Then pour in the red wine, turn off the stove and close the sauce lid to soak.

Meanwhile, cook pasta-spaghetti in large quantities of water with the addition of vegetable oil. Throw it in a colander and mix it with the prepared sauce. Delicious and original dish is ready!
