Curly cabbage, or cabbage kale, is an extraordinary variety of cabbage, which managed to avoid gene modification and domestication. In the Second World War in France, people from hunger and avitaminosis saved Jerusalem artichoke. At the same time, in England, it was cabbage of this sort that did not help starve to death. Kale, like Jerusalem artichoke, for many years gained the title of a "forgotten vegetable". Nowadays it is returned to the tables thanks to popular restaurants that actively use leaves to prepare their dishes.

Name and birthplace of feces

Curly cabbage has a name not one. Still it is called kale (emphasis is on the second syllable), brunkol, brown-berry, grunkol. But no matter how they call the vegetable, it looks the same in any case: its fringed leaves can have a violet or green hue, and they do not form heads. That is why in Latin the name of the product sounds Acephala or Brassica oleracea, which means "loose, unattached". This variety has a high, sometimes reaching one meter, cob, from which the leaves in all the sides are loose. Scientists are sure that Grünkol is the most ancient kind of wild cabbage.

Braunkoli can grow even in the most extreme climatic conditions. After the transferred frosts it turns out only more juicy and more sweet. In Europe, curly cabbage until the end of the Middle Ages was the most popular green vegetable. Many countries were engaged in growing leaves, but over time other crops replaced the vegetable. When this variety was remembered again, it was already considered exotic, especially in our latitudes.

But, nevertheless, no state considers itself to be the homeland of the grunken. Cabbage is loved in all countries, but everywhere they consider it brought from another country. The Germans call kale a French culture, in England the opinion is widespread that this cabbage comes from Scotland or Siberia, and for the Dutch it is a German "subject". In Great Britain and the USA, feces appear under the name Red Russian kale - Red Russian cabbage. They say that the merchants from Russia brought the leaves to America on ships, after which the product settled firmly in the Californian kitchen gardens. The trade relations between Arkhangelsk and London contributed to the second coming of the kale in England.

Types of Brown-Cabbage

Curly cabbage has many varieties:

  1. Siberian cabbage - a grade resistant to low temperatures and various pests.

In the product there is also vitamin K, which is extremely important for the human body. Provitamin A (beta-carotene) is also part of the feces. The product contains 85% of the daily dose of the substance. One hundred gram of cabbage brawnol has 28 calories.

Curly cabbage has a number of some positive properties for the sake of which it is necessary to grow this vegetable. The product contributes to the elimination of calcium deficiency. One gram of cabbage has about 1.35 milligrams of this substance, whereas in the same amount of milk it is only 1.13 milligrams. Calcium from this cabbage is absorbed by the body by 25% better than calcium from milk. For individuals who suffer from intolerance to milk protein, feces is an invaluable deposit of calcium.

Preparation of curly cabbage

Brunkol serves as a wonderful ingredient for a variety of dishes. Curly cabbage (recipes shown below) can become a component of a salad or soup. From the young leaves of the vegetable you can make a delicious salad. To create it, you need eight small leaves of cabbage, one hundred grams of feta cheese, one glass of red currants (gooseberries, raspberries, black currants, grapes or apple slices), a little extra virgin olive oil, a quarter of a glass of kino, parsley, dill, .

Wash and dried leaves of feces should be cut into thin strips. Then finely chop the onion and greens, whisk a part of the berries in the blender. Berry puree mixed with salt, olive oil and pepper. Now in a bowl, combine the rump, greens, onions and cabbage and mix the salad with the berry dressing. On top of the dish is recommended to decorate with pieces of cheese and remaining berries.

To prepare soup with cabbage grunkol it is worth preparing:

  • One hundred ml of cream.
  • One glass of chicken or vegetable broth.
  • 400 g of frozen peas.
  • White pepper, salt.
  • One potato.
  • 200 g of feces.
  • Two tablespoons of grated Parmesan cheese.
  • One or two branches of mint.
  • Three to four sprigs of basil.

Potatoes are cleaned and cut into large pieces. In two tanks we boil potatoes and peas. We divide the boiled products together with the cut cabbage leaves and broth and beat everything with a blender. In puree, add sliced leaves of basil and mint, parmesan, cream and put on a small fire a container of soup. Stir all the time, warm the dish for two minutes. Served with meat crumbs.

Planting a culture

As a rule, the culture is grown from seeds, which are planted in open soil. Curly cabbage, the seeds of which need to be planted in mid-April or early May, do not best transfer the transplant. Therefore, it is better not to touch the seeds that have already penetrated from the soil. The soil temperature for seeds should be 50 degrees. In each hole, a little humus must be added to the wood ash.

Very quickly grows curly cabbage (feces). Seeds are planted on the fifth or seventh day after planting. At home, the culture is grown from seedlings.

Tips for the vegetable

When buying cabbage kale, pay attention to the condition of its leaves: they should be crispy and dense and not have dark spots. The product is stored in the refrigerator in a paper bag for two weeks. If you need to keep the grunch longer, then it is done in the freezer in a plastic container.
