A hearty and healthy beetroot snack for the winter: we cook together

Beets, as well as potatoes, are very well kept and can lie in the refrigerator / cellar for a long time. Most likely, that is why it is less likely to be made from it than from tomatoes, cucumbers, peppers. However, a beetroot snack for the winter can be a great help, when you need something to cook quickly or just have a snack. It can be used as a dressing for borscht or cold beet soup, added to salads and there is just so, spreading on bread. Therefore, we advise you not to bypass this root, making conservation. We offer to try to cook two very delicious dishes, which in winter will go to "hurray."

The first recipe for beetroot snacks is a kind of salad with sweet pepper. The option is budgetary, but very tasty. It will be necessary for him:

  • Beets - about 3 kg;
  • Bulgarian pepper (better red) - a pound;
  • Onion - about 1,5 kg.

In addition to these ingredients, ingredients for the marinade are needed:

  • Table vinegar - glass;
  • Vegetable oil - glass;
  • Sugar - polstakana;
  • Water - about 300 ml;
  • Salt - 2 tablespoons.

This appetizer of beets for the winter is prepared very simply. Root should be pre-welded, peeled and grinded on a large grater (you can simply cut into strips). Cut the sweet peppers into slices, and the onions - rings. In a separate pan, prepare the marinade - for this mix all the ingredients listed above, put on fire and cook, stirring. When it boils, add the pepper and onions, cook for 7 minutes, then you can pour the beets. All together brewed for another 10 minutes. After that, it remains only to lay out the snack on sterilized jars and close until winter. Nothing complicated.

And the next appetizer of beets for the winter, which is definitely worth a try, is caviar. With gray or Borodino bread, it is eaten instantly! We will cook on the basis of kilograms of beets. You will need these components:

  • Carrots - a pound;
  • Ripe tomatoes - a pound;
  • Garlic - 5 teeth;
  • Apple cider vinegar - 2 tablespoons;
  • Vegetable oil - 3 large spoons;
  • Salt and spices (basil, oregano, turmeric, black pepper, etc.) - to taste.

Beets and carrots are mine, peeled and grated. Tomatoes we fill with boiling water and remove peel from them, and then grind in a blender (you can use a meat grinder). Garlic is cleaned and finely chopped.

In a cauldron with a thick bottom we warm up the vegetable oil and throw carrots and beets into it. Stew, stirring occasionally, 10 minutes. Then in the course are rubbed tomatoes and garlic, mix everything well, cover with a lid and cook for 20 minutes. Everything is almost finished - pour vinegar, add salt, spices. We cook for another 7 minutes. Now our vegetable assortment is cooled and milled to a uniform state of the eggs in the blender. The second appetizer of beet for the winter is ready. We lay out in jars and close with plastic covers. Keep in a cool place.

Here we can get such canned beets for the winter. The first billet is good to add when preparing some dishes: soups, potatoes with vegetables or chicken. And the second tasty is just like that - with freshly baked white bread or toasted Borodinsky. Winter will be much more fun with such delicious, nutritious and healthy snacks.
