By the way, our grandmothers always kept in mind the recipe for homemade cheese, as buying it several decades ago was not so easy. But from cow's milk it turned out a very tasty and useful product, which the whole family loved to eat.

It's time for you to learn how to cook homemade cheese. There are several ways to prepare it, some of which we will now consider.

Recipe for home cheese N 1

Ingredients: 1 kg of fresh cottage cheese, 0.5 liters of milk, 100 g of butter, 1 egg, 2 tsp of soda and 1 teaspoon of salt.

Preparation: Pour milk into the pan and put it on the fire to make it boil. Add cottage cheese to boiling milk, make small fire and continue cooking, do not forget to stir constantly. Cook cottage cheese and milk until the serum appears (ie, when the milk turns into a yellowish liquid). We take a colander, we cover it with gauze, folded in several layers. We shift the cottage cheese to cheesecloth, we tie gauze and hang it, so that all the whey will flow out of the curd. Keep 3-4 tablespoons of whey, in it you will then extinguish soda.

So, while our cottage cheese is draining, whisk in a bowl of butter, egg and add salt. Soda, which we extinguished with serum, is also added to our mixture. It can not be quite homogeneous.

We will melt our cheese in a water bath, so we take a large pot, pour water into it and set it to boil. Cottage cheese slightly squeezed and mixed with our mixture. Mix well with a spoon, then beat with a blender. We shift the mixture into a saucepan and put it on a water bath. Soon the cheese will begin to melt. Several times it will have to mix well, so as not to separate the butter. After about 10 minutes, remove the cheese from the plate, put it in a deep bowl and put it in the refrigerator for a couple of hours. That he did not absorb other smells from the refrigerator, it should be covered with another plate or lid.

Ingredients: 3 liters of milk, 100 g of vinegar, 100 g of salt, 100 g of sugar.

Preparation: Pour the milk into a large saucepan and put on medium heat. When the milk boils, reduce fire, add salt, sugar and vinegar. Slightly increase the heat and allow the milk to curdle. Put the cottage cheese in a cheesecloth and hang it to make the glass serum. When everything drains, put the cottage cheese, not getting from the gauze to the plate, and press from above with some heavy load. Put in the refrigerator for 3-4 hours. To diversify the cheese and give it a special taste, you can sprinkle it with sesame, pepper or something else.
