Pour the omelette (the recipe in a frying pan can be made using any other shape, but it is highly desirable that it be with high sides) in the container in which it will be cooked. Put on a very small fire or in a preheated oven. Consider that it will rise. Therefore, the frying pan or mold should not be filled more than two thirds. Keep on fire for thirty minutes. If you cook in the oven - do not open it. Cut into portions and pour with butter. Be prepared for the omelet after cooking to fall off a bit. In order to further increase the height of the serving, take a small container and fill in many portions at once. So you get the perfect omelet.

This dish is also called fritata. It is prepared with a variety of fillings. Cheese, meat, sausage or vegetables are added to a normal omelet. The recipe in the frying pan is completed, bringing the dish to the ready in the oven. There are kinds of frits with the addition of pasta (macaroni), parmesan and leek. It should be borne in mind that watery vegetables (for example, tomatoes) first need to get rid of a large amount of liquid by removing seeds and juice. It is very convenient to prepare fritat in a deep frying pan with two handles. This kind of omelette is also done on a slow fire. The classic recipe looks like this. In a small diameter frying pan, heat olive oil (two tablespoons), add the cut garlic and after a few minutes remove it after it has had time to give away its fragrance. Next, put the beaten eggs, salt and pepper. Hold the mixture on the fire for a while until the mixture thickens. Then add three types of grated cheese (each - a third cup). Ideally, it is mozzarella, cheddar and ricotta. Put the frying pan in the oven until the cheese melts (or just cover and reduce the heat). Serve the dish with sprinkled parsley or coriander. You can add mushrooms, spinach, ham, season with thyme and nutmeg. You can prepare fritata in portioning molds or add to it pieces of pre-fried fish fillet or boiled offal (in this case, the dish will become a bit like a casserole).
