The famous Uzbek salad "Diyer": cooking methods and dishes

"Diyer" salad is one of the most famous dishes of Uzbek cuisine. Extremely satisfying and tasty product can be used as an original snack during lunch or as an independent dish, replacing a full dinner.

The salad "Dier" is able to cook any Uzbek hostess. The recipe is extremely simple and requires minimal culinary skills. To prepare this dish you need the simplest foods: 2 eggs, 3 potatoes, salt, fresh cucumber, black ground pepper, 50 grams of hard cheese, vegetable oil and mayonnaise.

Making a salad "Diyer" is quite simple:

  1. First boil the eggs.
  2. Grind straws potatoes, cucumber and eggs, for cheese you can use a large or small grater.
  3. In the frying pan pour the oil and warm it well.
  4. In boiling fat, fry potatoes so that the straws on all sides were covered in a ruddy crust. After that, the finished product should be cooled, pouring it onto a napkin. This will help remove excess fat from the potatoes.
  5. Once all the products are ready, you can proceed with the assembly. Salad "Dier" is a puff dish. First put the potatoes on the bottom of the plate. Pre-it should be a little salt, sprinkle with pepper and mix well.
  6. Next is a layer of grated eggs.
  7. On top of it you need to carefully lay out cucumbers. All layers must be slightly salted and greased with mayonnaise.
  8. Finishes the construction of grated cheese.

Before eating, this salad must be cooled. To do this, leave it on the desktop at room temperature.

Custom assembly

Each housewife in her own way makes a salad "Dier". The recipe for its preparation, in principle, remains the same. Most often, only the way and sequence of assembly of the main components changes. One option involves the following ingredients: 4 boiled eggs, 2 potatoes, 100 grams of cheese, vegetable oil, 2 cucumbers, greens and mayonnaise.

Now you can start to prepare a salad "Dier". The recipe provides for the following steps:

  1. At the first stage, potatoes and cucumbers must be cut very thin straws. This requires a certain skill. Cheese and eggs are easiest to grind on a grater.
  2. At the next stage, potatoes should be fried in deep fry. A lot of oil, of course, is harmful. But this will make it possible to obtain on the surface of the potato a neat, characteristic crust. Ready potatoes should be poured on a paper towel so that it can absorb excess fat.
  3. Separately mix cucumbers, eggs and cheese.
  4. ½ distribute the prepared mixture on a plate.
  5. Cover it with a mesh of mayonnaise.
  6. Top with ½ of fried potatoes.
  7. Repeat all layers again.

Ready dish decorate with chopped greens. It can be dill, green onions or parsley. Here everyone should be guided by their own taste.

Salad with chicken

In some Uzbek families it is customary to prepare a national salad "Diyer" with chicken. It is made very simply. First on the desktop you need to collect all the necessary products for this: 2 eggs, 50 grams of hard cheese, 150 grams of potatoes, cucumbers and roasted chicken fillet, a little mayonnaise and green onions.

Technology of salad preparation:

  1. Cucumber cut into thin slabs. For this you can use a special grater.
  2. Finely chop the onions and eggs.
  3. Grind the cheese on the grater.
  4. Put the potatoes on the bottom of the salad bowl.
  5. From the top, distribute cucumbers.
  6. Sprinkle them with cheese.
  7. Lay out the chicken fillet.
  8. Cover it with grated eggs. First put the yolks, and then - the squirrels.
  9. Next comes the green onion.
  10. Pour the structure with mayonnaise, applying it as a mesh.
  11. Repeat all the layers, starting with the potatoes.

A little cheese can be left to finish the decoration of the dish. If there is no ready-made potatoes, you can make it yourself. For this you need:

  1. Peeled tubers grind on a grater for Korean carrots.
  2. Rinse well with water several times.
  3. Transfer the products to a colander, to make the glass all moisture.
  4. Fry in a saucepan in a lot of boiling oil.

Prepared in this way, the straw will keep its crisp properties for 24 hours.

Unbiased opinion

Even in their home country (in Uzbekistan), not everyone perceives the Diyer salad equally. Reviews about this dish is very controversial. One likes its pleasant taste and original design. In addition, it is very nutritious and can quickly satisfy hunger. Others argue that such a salad is extremely harmful to the human body. This is mainly due to the chips, which is its basis. There are two negative points here:

  1. Increased calorie content. People who are overweight or prone to fattening, such a salad is categorically contraindicated.
  2. During frying in hot oil, acrylamide is formed. This carcinogen is not degraded by enzymes during digestion, and can subsequently lead to a breakdown in the nervous system and an increased risk of cancer.

But the composition of the salad is designed in such a way as possible to minimize the harmful effects of chips. As you know, fresh vegetables and greens partially neutralize the action of carcinogens. They make the dish not so dangerous to humans. In addition, after frying the potatoes must be poured on a napkin, so that harmful fat is out of the product. The proper preparation and reasonable use of such a salad will ensure safety and bring real pleasure to its many lovers.
