So. Greek snack, a recipe of the cooking. We will try to describe in as much detail as possible!

Greek appetizer with beans. Cooking process

Prepared vegetables should preferably be dried with paper towels to remove excess moisture. Next, proceed to grind them.

Important note. In order not to waste extra time, while you grind vegetables, it is better to put the beans cook on fire and during this period bring it to half-ready.

Tomatoes can be cut into medium or small cubes, or milled to a uniform state in a food processor or with a meat grinder. To whom as it is pleasant more.

Onion can be finely chopped into cubes or straws. Here, too, for an amateur. The taste of this from the dish will not change.

Carrots should be grated on a large grater.

Sweet peppers can be cut into cubes, or can be straws.

Garlic and hot pepper must be crushed to a mushy condition. This can be done with a blender, combine or mincer.

Next, go to the cooking process. The Greek snack for the winter is cooked for about 30 minutes, provided that you have withstood the soaked beans for 12 or more hours.

It is very important to choose a good saucepan with a thick bottom so that the vegetables do not burn. If you cook on a gas stove, it is recommended to use a fire cutter to more evenly heat the bottom of the dishes.

Stirred beans are mixed with crushed tomatoes and put on fire. Cook for 30-40 minutes, periodically trying the beans for readiness. The remaining vegetables (except garlic and hot pepper) can be extinguished separately in a deep frying pan. After this, mix all ingredients in a saucepan, add salt, oil, vinegar and sugar. Bring everything together to a boil and ... ready!

By the way, if you do not have a deep pottery in which you can extinguish the vegetables, you can immediately mix everything in the pan at once, but add the garlic and hot pepper at the very end, for 2-3 minutes before the end of readiness.

The Greek appetizer with beans will turn out so sharp, as much as you add hot pepper. Here everyone can adjust to your taste. For children this snack can be made a separate portion in general without sharpness.

Seaming of cans

Since the Greek snack is good not only freshly prepared, but also in a cold form, it is excellent for conservation for the winter.

Glass jars are preliminarily prepared as follows. Wash thoroughly with powder. It cleans better when compared with liquid. Many housewives love to use ordinary baking soda for this purpose.

Then the banks should be sterilized. The options are different. I will describe the two most popular.

First option. Banks put in a cold oven and calcine for 10-15 minutes on a small fire. Do not put container in an already hot oven, as the glass from the temperature drop can crack.

The second option. Steam sterilization. Banks with a neck are placed on a regular (not electric) kettle and the water is brought to a boil. Then stand 2-3 minutes and remove. You can choose another capacity instead of a teapot. The main thing is that the neck is one that allows you not to fall down the bank.

In parallel, while the banks are sterilized, it is also necessary to sterilize the iron covers. To do this, they are placed in a small saucepan (you can all at once) and boil for about ten minutes.

In still hot cans the ready-made snack is laid out (it is desirable that it slightly boils). It is best to fill the tanks under the string so that no oxygen remains, which contributes to the spoilage of the product.

Closed hot cans should be hidden in a warm place. Usually they are wrapped in an old blanket or blanket. Thus, they retain heat longer, which contributes to better conditions for additional sterilization.

Storage conditions

After cooling (usually in a day), the banks are removed to a place of permanent storage, where the remaining conservation for the winter. Someone has a basement, if there is a private house, and someone has a pantry, if this is an ordinary apartment.

The optimal storage temperature for preservation is from 0 to 10 degrees Celsius, but not all have this capability. Can be stored in an apartment at normal room temperature. In this case, pay more attention to container sterilization, inspection of vegetables for spoilage and boiling of lids and concomitant improvers (ladle).

Options for eating snacks

In general, many people like this dish both in cold and hot. Therefore, you can use it immediately, but you can organize a salad from it . The Greek appetizer with beans often helps, when there is no time to cook and something must be invented very quickly.
