  2. Wash eggplants in cold water, dry. Cut the stems from the vegetable and cut into thin slices.
  3. Put the prepared eggplant in a container, salt, leave for 30 minutes to stand - during this time, the possible bitterness and excess moisture will leave.

  5. Bulgarian pepper, hot peppers and tomatoes wash, peel two heads of garlic. The more garlic is younger, the tastier the preservation will be. Pass these ingredients through a meat grinder or grind them with a blender.
  6. In the resulting tomato mass, add vegetable oil, sugar, vinegar and salt. Mix everything thoroughly until all the spices are completely dissolved.
  7. Lay the eggplant slices in a deep large frying pan or in a saucepan, cauldron, pour them into tomato sauce. Simmer for 30 minutes. Do not forget to stir occasionally so that all pieces are cooked at the same time and nothing burns.
