How to cook pangasius in batter?

Pangasius is a river fish, which belongs to a group of Somovens. Many mistakenly think that the second name of this fish is "marine language", but it is not so. This marine language belongs to the family of flounder and lives exclusively in sea waters. Pangasius is also grown on farms, mainly in Vietnam.

When choosing pangasius in a store, you should give preference to a fillet that has a light pink or cream shade. The yellow or reddish color of the fillet indicates not the highest quality of the product. As a rule, in our stores the fillet of pangasius is sold in glazed form, that is, covered with ice crust. So it should be taken into account that about 100 grams of the weight of the fillet purchased falls on pure ice.

Before you start cooking, you need to defrost the fillet. Ideally, this should be done gradually, placing the dishes with the frozen product on the bottom shelf of the refrigerator. "Shock" methods, such as defrosting in hot water or a microwave oven, spoil the taste of fish, so use them only in extreme cases. Defrosted fillets should be dried properly with a paper towel.

From Pangasius you can cook many different dishes. For example, why not make pangasius in batter? To prepare this dish, cut the fillets into small pieces (2-3 pieces per serving), then salt (1 kg of fillet about a teaspoon of salt) and pepper. You can sprinkle pieces of special seasoning for fish. We set aside the prepared fillet aside and do the batter for the batter.

To do this, whisk three eggs, add a glass of milk and about 200 grams of flour. Dough salt. Pieces of fish dip into the batter and shipped to a skillet with preheated vegetable oil. It is important that the oil was a lot and it was hot. Fry fish, turning, until the dough becomes golden.

Cooking pangasius in batter can also be done using a batter mixed with beer. To prepare it take egg yolks, add a teaspoon of sugar, salt and pour half the glass of beer and milk. All mix and pour flour in such quantity that the dough has got a consistence of sour cream. Separately whisk egg white and inject into the batter. Further pangasius in batter is prepared similarly to the first recipe.

Another version of the test, which can be prepared for the dish "Pangasius in batter", is kneaded on the basis of mayonnaise. For its preparation, beat up two eggs, add to them 100 grams of mayonnaise, salt, given that the mayonnaise is salty enough. Now add a very finely chopped onion and flour (about 4 tablespoons). The dough should look like a pancake. Dipped the prepared fillet in the batter and fry in a large amount of oil.

It should be said that the dish "Pangasius fillet in batter" is quite high-calorie, since during cooking the dough absorbs a lot of oil. Even if you put the fish on the paper towel to remove excess fat after roasting, the dish will still turn out to be non-dietary, but very tasty.

Those who do not like fried fish, it is necessary to cook pangasius fillets in the oven. To do this, take about a kilogram of fillets, a couple of carrots, two or three onions depending on the size, a little butter, seasoning, flour for crumbling fish. If desired, you can add a little mayonnaise and cheese.

Prepared fillet of salt and sprinkle with seasonings for fish. Then we roll the pieces in flour. Take the form, lubricate it with butter and put half the onion, cut into rings. From above we put pieces of fish, and on top again bow. The top layer is grated carrot. If desired, you can add a layer of thin tomato slices. Vegetables should be slightly salted and peppered, top can be lubricated with mayonnaise.

We put the products in the oven, which is heated to 170 degrees, and bake for 25 minutes. Then you need to remove the shape, sprinkle the grated cheese on top and send it back to the oven until a crust of cheese is formed. Our baked pangasius fillet is ready, you can invite the household to the table.

Serve baked or cooked in battered fish, sprinkling with fresh herbs and cooking a garnish salad of vegetables.
