Did you cook dishes without seasonings? Agree, the dish is quite edible, but still something is clearly missing. And not enough, of course, seasonings. This is exactly what will be discussed today. You can use already finished products, you can cook yourself. But in the second case (this applies to absolutely all standard seasonings sold in our store), we have the opportunity to experiment by adding or removing ingredients at our own will. After all, someone does not like thyme, someone does not like the aroma of cumin or cardamom.

Seasoning for fish

Pick up some specific composition of spices for cooking fish is impossible. After all, there are a lot of varieties of fish, and the variations of cooking are even greater. Here you need to take into account, for example, that the fish boiled (or stewed) gives its flavor more than fried. Therefore, when choosing the seasoning for fish, it is necessary to consider this property. The following are examples of seasonings, according to the type of preparation.

Seasoning for fish is spicy. A mixture of white pepper, bay leaves, ginger, fragrant black pepper, dried onions, coriander, mustard seeds, dill and thyme is smeared in a coffee grinder. Especially suitable is a seasoning for fish, which is planned to pickle or salt.

Seasoning for fried fish (you can use the assorted of these or choose one kind of seasoning): black pepper, fennel, bay leaf, caraway seeds, almonds, dill, coriander, garlic, curry. If you cook on the grill, it will be appropriate: white pepper, sweet paprika, tarragon, dill, rosemary, saffron, turmeric, thyme.

Seasoning for shish kebab

To prepare this seasoning, prepare: dried vegetables (garlic, onion green (also dried), parsley, dill), three kinds of pepper (Bulgarian, black, chili), mustard, thyme, sweet pepper, thyme, nutmeg, coriander and mustard powder). The cooking procedure is simple, like the previous recipes: we send the ingredients (except mustard) to the coffee grinder. Now add the mustard powder to the resulting mixture (the amount of mustard is four times the amount of the mixture obtained after grinding in the coffee grinder).

Seasoning for chicken

Very well recommended the following seasoning. It consists of: paprika, fenugreek leaves, muscat color (can be replaced with nutmeg, but note that in this case the fragrance will be sharper and more saturated, so do not overdo it), mango, ground turmeric, ground cumin, coriander, cardamom, cinnamon , Ginger (root), garlic, pepper (chili and black), onion. All the ingredients in approximately equal proportions in the dried form send to the coffee grinder. The seasoning for the chicken is ready. It is suitable for any dish made from chicken. It can be added to cutlets, stewed chicken, grilled chicken , etc.

Another seasoning for chicken, more simple and containing fewer ingredients, is also able to revitalize the dish with a new flavor and give a special flavor. In our family, she, perhaps, "on duty" - is preparing quickly, the components are available and always at hand. To prepare this seasoning, you need: garlic (dried), turmeric, coriander, curry, hops-suneli, nutmeg and ginger. All of the above we send to the coffee grinder. The seasoning is ready.

Take note: nutmeg has a very strong flavor, so you do not need to add it in large quantities, otherwise it can kill (or even muffle) all the other ingredients.

Do not forget that herbs have the property of deterioration, oxidizing when interacting with oxygen. Complex chemical reactions take place here, so we will not go into this area. Suffice it to say that all seasonings should be stored in very tightly closed containers (preferably glass) for not more than a year. Jars with cooked spices are better for you to sign (for example, a marker), indicating the composition of the herbs.
