Shrimp cream soup with croutons

We will need:

  • Freshly frozen shrimps - half a kilogram;
  • A glass of pasteurized milk ;
  • Butter 30 g;
  • Wheat flour 20 g;
  • Onions, carrots;
  • Eight pieces of toast;
  • Yolk of one egg.

Boiled shrimp in salted water is cleaned from the shell and cut into several parts. The remaining broth after shrimp is not poured. Wheat flour must be dried in a frying pan until a light yellow shade, allow it to cool slightly and gently dilute with broth.

Cut the shrimps with vegetables (onions and carrots) in butter - you can add a little broth. Then the resulting mass is passed through a meat grinder or a blender. In the mince of seafood, add a small amount of broth and flour, again sent to cook for just ten minutes.

While the shrimp soup is on fire, we prepare the egg-milk mass. Take the yolk and gradually add it to the hot milk - cook until a thick, uniform consistency is formed. In a cooled soup we pour our delicious mass and serve croutons. You can use greens for decoration.

Spicy shrimp soup with mushrooms

Ingredients:

  • Champignons or oyster mushrooms 300 gr .;
  • The same amount of shrimp;
  • egg;
  • Liter of mushroom broth ;
  • Milk 50 g;
  • butter;
  • Vegetables (onions, garlic, carrots, green peas);
  • Dill, coriander.

Washed prawns cook until ready, clean and cool. Broth, which cooked crustaceans, it is necessary to strain, then add the sliced mushrooms, cream onion and carrots and green peas, spread on butter.

Boil the vegetables with mushrooms for ten minutes, then add the purified seafood and egg-milk mixture. Prepare the mass as follows: combine the egg with milk and butter, mix well. Prepare the soup of shrimp and mushrooms in a blender and sprinkle it with chopped herbs. It turns out a delicate, fragrant cream-soup - you will lick your fingers!

Therefore, it is highly discouraged to purchase seafood from suspicious and untested suppliers. When choosing, pay attention to the color of the head of the crustacean: if it is a black shade, this indicates an incorrect storage of the product and its deterioration.
