Carob. What it is?

Carob is a plant that belongs to the family of legumes. The tree has a straight, powerful trunk and has a dense crown. The leaves of the tree are odd-pinnate, large and rather dense. On the contrary, flowers are small and unattractive. The carob tree gives fruits in the form of beans, which can reach a length of up to 15 cm. The fruits are so constant in weight that in ancient times in the Middle East they were used as a measure of weights. With their help, the weight of small precious stones was determined.

The chemical composition of the fruits of this plant includes organic and tanning substances, as well as sugar, pectin, starch and protein. Moreover, they are rich in vitamin B and various minerals, such as: potassium, fluoride and calcium. Thanks to such a rich composition, the fruits of this tree have long been used as a folk remedy for treating colds, strengthening immunity and as a diuretic. Carob is also widely used for the manufacture of anti-diarrhea and solutions that have wound-healing properties, which are used for damage to the oral cavity.

This plant has found its application not only in the pharmaceutical industry, but also in the cosmetic industry. A separate direction in pharmaceutics is the production of various stabilizers from the fruits of this tree. In folk medicine carob is used to purify the body of toxins, since its components perfectly stimulate the urinary system.

The pods of this tree are very sweet and have a juicy pulp. They contain up to 50% sugar. Carob pulp is used to make a cocoa substitute, which is called "kerob". Carob is a very sweet powder, which to its taste resembles cocoa, but it has a less flavorful taste.

The fact that the carob beans are quite sweet, provides an opportunity to use them as a substitute for sugar. Especially this property is important for people suffering from diabetes and those who control weight. As a component of dietary nutrition, this means not only helps to eliminate excess weight, but also allows during the diet not to deprive the body of useful substances, since the carob fruits contain them in huge quantities.

The beans of this plant are used not only as food, but also in the form of syrups or broths. Carob, a syrup from which in recent years has become very popular, is now available in Russia. Despite the fact that it is produced mainly in Cyprus, it is exported to almost all countries of the world.
