In 1897, there were already five such cellars. French specialists were invited here to tell their Russian colleagues about their secrets. But they were engaged in the production of wine on their own and did not even allow anyone to approach the process. Soon the locals were involved in rough work. When one of them became interested in the secret of the recipe "Abrau-Durso" (the champagne of this brand was quite different from the others), he was arrested and sent to prison.

However, during the revolution of 1917, the French themselves left this place and abandoned production. The locals looted the cellars. And in 1920, winemaking resumed. And it was the prisoner who had been arrested and headed him. Under his leadership, the enterprise began to thrive actively. It could produce tens of thousands of bottles a year. And it should be noted that "Abrau-Durso" - champagne, which was not inferior to the French in quality. During the Soviet Union, the company earned a new capacity and in the 80s it was able to produce 3 million bottles per year. This trade mark received medals for the participation in various exhibitions of the all-Union and international format.

Modern production

Now JSC "Abrau-Durso" is the largest producer of sparkling wines in Russia. Here, as in France, both the acrato-and classical methods of production are applied. The first differs from the latter in that the wine is not made in bottles, but in acrotophores - special containers. Here, the fermentation mixture itself is naturally filled at a certain temperature with carbon dioxide. The entire technological cycle lasts about a month. This is how Abrau-Durso is made - champagne, the price of which is not very high. In this case, one should not rely on very high taste qualities.

Real gourmets can really appreciate the wine, which was prepared in a classic way. It takes more than three years to produce it. And the procedure itself is quite complicated. After that, for two months with the help of rapid oscillatory movements, the bottles are shaken thoroughly every day. And gradually they begin to spread almost vertically. Thus, the sediment begins to move to the plug itself.

In order to completely get rid of it, the neck needs to be frozen. After such procedure, the specialist very carefully removes the brace, thereby opening the bottle. Together with the precipitate, the plug jumps out of the container very quickly. Then it is installed on the conveyor and transferred to a special liquor-dosing unit. It is already determined whether this wine will be a brut, which contains less than 1.5% sugar, dry - with a sugar content of 2%, or with 4% sugar - semi-dry. "Abrau-Durso" - champagne, which has a strength of 10.5 to 12.5 degrees.
