Triangles with meat and potatoes

Most recently, I visited my beloved aunt, who lives in Tatarstan. I remember her triangles with meat and potatoes. They are very tasty, they turned out. She took the recipe, which she checked right after she arrived home. In general, triangles with meat and potatoes are considered a Tatar national dish, the Tatars call them "echpochmak", which means "triangle". This is a real delicacy, which is appropriate both in everyday and festive country.

So, in order to cook these miracle pies, we will need the following products.

For the test:

- a glass of warm milk;

- half a glass of warm water;

- 20 grams of yeast, you can dry;

- 1 egg;

- 50 grams of butter or margarine;

- salt and sugar in a teaspoon;

- wheat flour of the first or highest grade.

First you need to beat the egg, salt and sugar. Then add water and milk, mix everything. It is important that milk and water are warm, so the dough ripens faster. Lightly melt the oil and combine it with the resulting liquid. Then dissolve the yeast in this mixture, add a glass of flour and put in a warm place for an hour (if you do not have time to wait, you can immediately knead the dough as a cake and put in a warm place for 40 minutes). When this mixture begins to ferment, knead the steep dough gradually adding flour. Ready to give up.

While the dough rises, we prepare the filling.

For filling:

- 500 grams of meat (I use homemade minced meat, although ideally a recipe for triangles with meat suggests meat, cut into small cubes);

- 5 medium raw potatoes;

- 3 medium bulbs;

- pepper ground black and salt to taste.

Minced meat minced, if it is frozen, cut potatoes into small cubes. Chop onion and combine with the meat filling, pepper, salt and mix everything. Fry the filling is not necessary, otherwise all taste and aroma will disappear.

When the dough and filling are ready, you can start the most interesting. Dough rolled into a layer thickness of 0.5 cm and cut out of it a large suchni. At the center of the juice, lay the stuffing, cover the edges and tie it with a triangle. Finished triangles lay on a baking tray and bake in the oven. Patties are eaten hot. To bother with the yeast test, of course, not everyone wants. So I once did not have time to prepare the test, and in the end I decided to make a batterless dough.

The recipe for the test is without yeast. We will need:

- half-packs of low-fat sour cream;

- a packet of margarine;

- 1 egg;

- flour;

- 50 ml of boiled water;

- Hydrated soda - ½ teaspoon;

- salt and sugar - a teaspoonful.

Out of this amount of test, about 20-25 juices are obtained. Egg, salt and sugar whip. Margarine grate on a large grater and connect with the egg. Add sour cream, water and mix everything. Combine it with the hydrated soda. Add flour and knead the dough as a dumplings. Then in the same way roll out the dough, cut out the juices and mold the triangles with the meat. Preparation of the test takes all 20 minutes, but it turns out lush and tasty.

My friend and at all bakes triangles from a short pastry. Here's a recipe: one packet of margarine (this is about 200 grams), 150 ml of fatty sour cream, 1 egg, salt and flour. All the ingredients are combined and kneaded with a stiff dough. The taste of these pies is slightly different, and they are more satisfying.

On the basis of the existing recipe, fillings can be experimented. I tried to replace meat with fried champignons, it turned out very even nothing. Someone uses chicken, someone likes pork more. Perfectly combines potatoes with fish. In general, there are lots of options, there would be a desire.
