The recipe for tobacco chicken came to us from the Caucasian cuisine and won great popularity. In Russia, the chicken of tobacco is considered an independent dish, and at home - it's just a semi-finished product, so they prepare it only with salt and pepper.

To prepare this Georgian dish you need a special frying pan for the chicken of tobacco. Earlier in Georgia, this dish was prepared in a national fry pan, "tapaka", from which the name of the dish happened, or on a grate on an open fire. Before frying, the chicken carcass was flattened.

This very tasty dish is a whole fried chicken. But to taste the dish was the one that is needed, it is very important to choose the right bird. The chicken bought in the store is unlikely to fit, as the meat is tasteless, so it's better to buy a bird at the market. In Georgia, to get tender, soft and tasty meat, the bird is specially fattened with corn.

You can taste the chicken of tobacco in any restaurant of Caucasian cuisine, but you can cook it at home. The recipe for a chicken is not at all complicated. To make it, you need to take the following ingredients:

* Chicken 1 kilogram
* Garlic 4 cloves
* Black or red ground pepper
* Butter 2 tablespoons
* Lemon, salt, herbs
* Vinegar 1 teaspoon
* Water 2 tablespoons

A special cast-iron fry pan for a tobacco chicken has a screw-on cover that presses the carcass. But if there is no such frying pan, any one with a thick bottom will do.

Before you make a chicken, you need to beat it well, having cut it first on the breast. But you need to do this carefully, so that the chicken does not lose shape. Then it should be salt, pepper and cover with vegetable oil. Before frying, the chicken needs to be held for 15 minutes in a cool place, so that it is de-marinated. Some mistresses rub the carcass with a special seasoning. Roast the chicken in a heated frying pan under the opacity for about 20 minutes on each side until golden brown. It is very important not to overcook it.

Readiness is determined with a fork or knife, piercing them with a carcass: if the juice that stands out from the incision is transparent - the chicken is ready. It is best to fry the bird on melted butter, which is included in the recipe of the chicken of tobacco, but it can be replaced with a creamy one. If the chicken is not fat enough, you need to add oil.

As an oppression, you can use a plate on which a pan filled with water is placed. Some housewives, before preparing a chicken of tobacco, rub it with garlic. However, this should not be done - there may be bitterness.

Garlic, which is part of the recipe for tobacco chicken, is needed to make the garlic filling, which is watered the finished chicken just before serving, but it can be served in a separate cup. To make garlic mixture, pour the chopped garlic with two tablespoons of boiling water and mix with a teaspoon of vinegar.

The chicken before serving should be sprinkled with lemon juice, decorated with finely chopped herbs and lemon slices. Eat chicken tobacco hands. As a side dish, you can serve vegetables. It is better to take not one large chicken, but several small ones, one for each eater. Prepare this dish you can and in the oven, but that it does not dry out, you need to water it every ten minutes with the juice. With this recipe, chicken thighs or chicken legs are now prepared.
