Simple casserole from potatoes and zucchini

To cook a delicious vegetable dish, you will need very little time and effort. Simple casserole from potatoes and zucchini

For the dish you will need:

  • 1 kg of potato tubers and the same number of zucchini;
  • 2 medium bulbs;
  • Some garlic and greens;
  • Bread crumbs, vegetable oil and spices.

Zucchini wash, peel and cut into medium-thick plates. Quickly fry them in vegetable oil, salt, pepper and sprinkle with herbs and garlic. This will be the filling. Potatoes also need to be cleaned and boiled, make from it a regular puree. You can also use the finished product - so the cooking process will be even faster. Dilute the dry mashed potatoes as indicated on the package. Add to it finely chopped and toasted to golden color onions. On a baking sheet, sprinkled with breadcrumbs and greased with vegetable oil, first lay out the mashed potatoes, after - zucchini, then again mashed. Casserole from potatoes and zucchini will be ready in half an hour at a temperature of 200 o C. Before sending to the oven, the dish should be sprinkled with vegetable oil. If you want a fragrant crust to form on top, 10 minutes prior to cooking sprinkle the top with grated "Cheddar" or "Parmesan", or smear with a small amount of mayonnaise.

If you do not have an oven or you want to cook this dish very quickly, you can use a microwave. For a large portion of the casserole, take:

  • 2-3 large potato tubers;
  • 1 medium zucchini or half large;
  • 1 carrot and tomato;
  • 250 ml of any sour cream;
  • A little grated cheese;
  • Salt, curry seasoning, a half-fresh basil, vegetable oil and salt.

Mix sour cream, curry and salt. Grate the cheese on a grater and add to the sauce. Prepare vegetables so that you get the most delicious casserole: squash, potatoes, tomato wash, and then cut into slices, chop onion, and grate the carrots. Basil finely crumble. Now the bottom of the baking dish needs to be pasted with paper, sprinkle with crackers on top and put half the number of potato slices on them. Lubricate the layer with sour cream cheese sauce. Next is the turn of courgettes, tomatoes, carrots and onions. Pour the sauce, after again you need to lay out a layer of potatoes and pour it with the remaining sour cream dressing. The zucchini of courgettes and potatoes in the microwave oven is baked first for 10 minutes at a power of 600 watts, then you need to change the mode to 850 watts and cook another 8 minutes. When the time is over, leave the dish to stand in the oven for a quarter of an hour. Then you can take it out and serve it with a sour cream or a thick natural yoghurt. Both recipes are equally tasty - try for lunch or dinner to take as one of them and offer your home a fragrant vegetable dish.
