Eggplant is a beautiful vegetable and at the same time delicious. Dishes cooked from them have an unusual original taste. What to cook with eggplant? There are many options and methods, and each of them is good in its own way. One of the popular dishes can be called a sauté from eggplant. About how to cook it, is described in this article.

In order to make this dish, you need about one kilogram of eggplant, three peppers of Bulgarian, two medium tomatoes, 100 grams of cream and half a glass of vegetable oil and a little root of parsley.

First you need to wash and clean the eggplant. Remove the stalk and the peel. Then cut them in circles and salt. Put the butter on the frying pan and pour in the vegetable. Fry the eggplant circles.

We clear the pepper by removing seeds and stem. If possible, then bake it a bit using the "grill" function. When the pepper cools, cut it with medium cubes. Wash tomatoes cut into small pieces and lightly fry. Then add them to the pepper. Salt this mixture to taste and rash a little finely chopped parsley root.

We now turn to the formation of a dish. We lay out a circle of eggplant, and on top we put a nice mixture of peppers and a tomato. We decorate chopped greens and lettuce leaves.
Sautéed aubergines can be made in another way. In this case, take a kilogram of eggplant, 4 medium ripe tomatoes, 400 grams of sweet pepper, greens and about 100 grams of vegetable and butter.

Before preparation it is necessary to clean and cut circles eggplants. Then add a little salt to them and set aside. We prepare the remaining vegetables. Pepper is cleaned of seeds and stems and cut into thin, long pieces. Put the peppers and eggplants in a frying pan with a mixture of oils and fry. Separately, you need to sliced finely chopped onions and tomatoes. Now take the dishes for a saute of eggplant and put in it a layer of eggplant and pepper. From above lay a layer of onions and tomatoes. So continue until the finished vegetables. If necessary, add spices. We put the container on the fire and stew the vegetables until they are ready. When serving, you can decorate with finely chopped greens.

A more original recipe includes two main vegetables: zucchini and eggplant. Their combination makes the sauté unusually tasty. It will take about a kilogram of eggplant and 700 grams of courgettes. These vegetables need to be cut into cubes. If zucchini and eggplant are young, then the peel can not be cleaned. To prepare this dish, you will also need three large onions, 3-4 cloves of garlic, one bitter pepper, 100 grams of any mayonnaise and half a bunch of parsley or other greens.

Onions are cleaned and cut into half rings. Then fry it until golden in vegetable oil. Add to it sliced zucchini and eggplant. Sypem salt and any spices. Stew until cooked. The cooking time is approximately 10-12 minutes. Then we remove the frying pan from the fire and spread the sauté from the eggplant and zucchini into another container. Add garlic to them, using a press, greens finely chopped, chopped pepper bitter and mayonnaise. All ingredients must be mixed well. Allow the dish to stand for 30 minutes. In this case, it will be saturated with the aroma and flavors of garlic and pepper. We serve on the table in the form of a side dish or a separate dish.

It can also be served as a separate dish. Usually when cooking, use parsley greens, but you can, if desired, add any to your taste.
