Beat with the help of a mixer 3 eggs together with half a spoonful of sugar and a quarter of a teaspoon of salt. Pour half a glass of milk and gradually add 250 grams of flour, kneading the dough so that no lumps form. Meanwhile, boil another 2 cups of milk and pour it into the mass, stirring intensively, that is, "brew" the dough. Add a ready-made dough a couple of spoons of vegetable oil and let it brew for at least half an hour before baking.

Furnace thin pancakes are best in a special frying pan with low sides and non-stick coating. We put the finished pancakes on a flat plate with a pile.

To make pancakes, you need a frying pan with high sides or a cake shape. It should be oiled and put on the bottom and the walls of pancakes. Then put a layer of filling, and again a pancake. The oven should be at a temperature of 180 degrees, but the baking time depends on what kind of stuffing was used.

It should be said that pancake pies, as well as ordinary pies, can be cooked with a wide variety of fillings. It can be like unsweetened fillings (meat, fish, chicken, mushrooms, cheese, vegetables, sausage), and sweet dessert varieties (fruit, jam, cottage cheese, boiled condensed milk).

Especially interesting and delicious pancake pies can be prepared using several types of fillings at the same time. For example, minced meat, mushrooms, stewed in cream, grated cheese. Or boiled chopped chicken with white sauce and a filling of boiled eggs with rice. You can cook sweet puff pancakes, for example, alternating fillings from sweetened cottage cheese and fruits.

And how to make a pancake cake? To prepare this dish you can use any cream - sour cream, on condensed milk or custard. For interlayer pancakes you can use fruits or chopped nuts. It is most convenient to collect a cake of pancakes in a split form. At the bottom is laid out pancake, which is smeared with cream and sprinkled with nuts, you can also lay out pieces of fruit, for example, bananas. Then again, put the pancake and repeat the layers before filling the form. The top of the cake can be decorated with cream, jelly or fruit. Bake such a cake is not necessary, it is only necessary to leave it for a couple of hours, without removing it in the refrigerator, for impregnation.

As an original snack or dessert, you can prepare a dish like pancake bags. In principle, these are the same stuffed pancakes, differing only in form. The filling for pancake bags can be any. Spread a spoonful of ready-made filling in the center of the pancake and collect its edges together, forming a bag. To a pancake kept shape, snack pancake bags with savory stuffing bandage with a feather of green onions. If the filling is sweet, then on the edge of the pancake bag you can put on a small bagel or drying.
