This is the well-known Abkhazian sauce with a piquant spicy taste, which is prepared from tomatoes, hot and Bulgarian peppers with garlic and greens. The eastern seasoning has grown fond of many peoples for their universality and usefulness.

Over time, the recipe for the famous sauce has undergone a number of changes. More and more, something similar can be observed on supermarket shelves, but the product only remotely resembles an Abkhazian treat. It is better not to risk and cook the dish yourself.

It is made not only from tomato and greens, but also zucchini, carrots and even aubergines. Today we will surprise the readers - we will tell you how to close the blue ones in adzhik. The most interesting thing is that spicy seasoning is harmoniously combined with any side dishes. Her taste will not leave anyone indifferent.

Aromatic ajika from blue eggplant

The recipe for a snack will surprise with an unexpected flavor bouquet. Vegetarians and adherents of healthy food will like blue eggplants in Adzhika for the winter. A simple recipe implies the presence of the following ingredients:

  • A kilogram of aubergines of medium size (choose small vegetables);
  • Fresh tomatoes - 3 pcs .;
  • Four cloves of garlic;
  • Three Bulgarian peppers;
  • Carrots - 2 pcs.

You will need 1/3 cup of vinegar 9%, three bay leaves, 8 peppercorns, a tablespoon of salt, 15 grams of sugar and 100 ml of vegetable oil.

Instructions

Peel the sweet pepper from the seeds, remove the peel from the carrot, chop everything with a meat grinder or blender. If desired, you can add hot chili. Circumfer the tomatoes with boiling water, remove the rind from them, cut them finely and transfer them to the rest of the vegetables. In the same mass, add sugar and salt, as well as pour the vegetable oil.

Put the sauce on the stove, bring it to the boiling point, cover and simmer for 60 minutes. At the end of the interval, add chopped garlic, laurel, bell pepper, pour in the indicated amount of vinegar. Cook for another 15 minutes over low heat.

Now let's prepare the eggplant. We clean the washed vegetables, cut the stems and cut them into small circles. A little bit of salting, we pass from two sides to a ruddy crust. It remains to expand on sterile containers: at the bottom we dip some of the fried eggplant, pour hot sauce. Layers alternate. Blue in adzhik roll up the lid, tightly wrapped in a warm cloth and do not touch 5-6 hours.

After the full cooling of the winter snack we transfer the banks to a cool place, preferably in a cellar or a pantry. An ideal addition to meat and fish delicacies, and in winter a vitaminized salad with a vengeance will replace fresh vegetables.

"Blue in Adzhika" for the winter: a simple recipe for home harvesting

If there is no desire and time to tinker with banks, sterilize them, then you can prepare a snack for everyday consumption. We advise you to prepare in small batches, so that the blue in the adjika is not sour in the refrigerator. We will need:

  • 5-6 aubergines (medium-sized);
  • Bulgarian pepper in the amount of two pieces;
  • A pod of chili;
  • Three tomatoes;
  • 3-4 cloves of garlic;
  • Ground paprika (to taste);
  • salt;
  • 100 ml of vegetable oil.

Let's start the workflow

We clean the eggplants, cut into circles (no more than 2 cm in diameter). Vegetables dip in vegetable oil, spread on a sheet of parchment paper, top sprinkled with paprika (you can use another spice) and salt. We put the baking tray in the oven for 15-20 minutes. This method makes it possible to make aubergines blue in adzhika more juicy and soft.

While our vegetables are baked, let's make a spicy sauce. Immerse the tomatoes in boiling water for 30 seconds. Then we remove the skin from them, cut them, put them into the blender bowl. There we send slices of garlic, sweet pepper and chili. Boil the mass for an hour. If the seasoning seems fresh, then report the spices and salt.

Baked eggplants pour hot marinade, cover with food film or plastic lid and put in the refrigerator for 2-3 hours. Blue in adzhika without sterilization can be used as an independent snack, add to the first dishes, pizza, combine with any side dishes.
