Eastern dolma. Recipe for gourmets
After trying once such a delicious dish as dolma, remember the recipe forever and try to cook it as often as possible. National dish of oriental cuisine. Armenian dolma
A delicious dish, for which you will need to prepare 350 grams of grape leaves, marinated, 300 grams of minced pork and 500 grams of beef. Be sure to try to cook dolma with mutton meat. The taste and aroma of this dish are unique. You will also need one bunch of parsley and dill, a large onion, a hundred grams of butter, a hundred grams of rice and tomato puree. This dish will require a special sauce. To prepare it you need the following products: 60 grams of fresh curdled milk, 50 grams of sour cream, two cloves of garlic, a bunch of dill and a few mint leaves. To begin, we wash the leaves of the grapes to remove excess marinade from them. Carefully cut out cuttings from each leaf, put it into a saucepan and pour boiling water for 5 minutes, then merge the resulting brine. Rice is washed and poured in a bowl of boiling water, insist to increase in volume in half. Peel and chop the finely chopped onions with tomato paste using butter. Mix in a bowl minced meat, rice, fried onions, chopped dill and parsley and mix well. The resulting mass of salt, slightly pepper and a little diluted with water.
For the preparation of dolma, a saucepan with a thick bottom is needed, and cauldron is a perfect fit. Lubricate the dishes with oil and cover the bottom with the leaves of the grapes. We take a large board and lay out on it leaves with a rough side up. For each we put a little stuffing, bend the sides and roll the roll. Ready semi-finished products are densely packed in a prepared pan in several layers. At the top of our rolls we lay a layer of leaves. Pour into the pan boiling water to the top level of grape leaves and cook for about an hour. While our dish is preparing, we are engaged in a fragrant sauce. Peel the garlic and let it through the press. Dill is crushed. Mix in a bowl of sour cream, curdled milk, greens, garlic mass and salt. Beat the sauce. We put the ready dolma on a dish, fill it with slices of butter and serve with a sauce to the table.

Passus dolma
It will take a little head of salted or sauerkraut. But if you can not buy it, then do it yourself. The ferment will take only three days. We take five bulbs, clean and finely chop. We heat the frying pan, pour a little vegetable oil into it, put onions and two tablespoons of tomato puree. Passer for 10 minutes. To make minced meat it is more convenient to take canned beans, but you can also boil it in advance, in this case add to the beans one hundred grams of chickpeas and lentils. Separately we cook two hundred grams of wheat cereals. Mix in a bowl beans, chickpeas, lentils, wheat porridge and onions in tomato sauce.
We disassemble the head of salted cabbage to the leaves. We spread them in one row on the table. For each, put a tablespoon of minced meat and roll the roll. Finished semi-finished products are placed in a thick-walled pan, covering the top with the remains of toasted onions. Fill the pan with boiling water, add a few cloves of garlic and a bunch of chopped parsley. From above we stack the plate to press down the dolma and prevent it from floating. Cooking with the lid closed for about 40 minutes on a small fire. The dish turns out to be sharp and unusually tasty. If desired, you can make sour cream sauce.
