Who first cooked meat in French?

It was back in the era of Prince Orlov. This nobleman had a very talented cook who, during his trip with his master in Europe, tasted mayonnaise in France. This sauce liked the chef, and he wanted to bake meat under it. Orlov's dish had to taste, and since then it has become known as "French meat". Therefore, the Russian version of meat in French implies the presence of meat and mayonnaise.

However, the French themselves have a different opinion on how to make meat. In French, it is prepared as follows: at the same time, meat is cooked in the oven, and mayonnaise is not used as a side dish.

Recipe:

• Prepare a roasting dish. Lubricate it with oil.

• Cut potatoes of medium size (about 8-10 pieces) with thin circles (medallions). You can roll potatoes in flour. Distribute evenly the potato "medallions" on the bottom of the mold. Add half a cup of water. It is necessary that the potato is slightly cooked and not raw. Add salt.

• Cut a pork kilogram of pork into small pieces and lightly brown it to a crusty crust in vegetable oil (olive oil can be used). Do not forget to salt and pepper the meat. Some cooks in this recipe use chicken or turkey, but these are only options, since it is only pork that really prepares meat in French.

• Champignons (preferably fresh, not frozen) wash and cut into several pieces. Small can be used without cutting. Mushrooms (about 300-400 g) fry better in vegetable oil and slightly salt. Lay a layer of mushrooms on meat.

• Cut rings and fry onions (3 or 4 medium bulbs). Place on top of meat and mushrooms.

• Sprinkle with chopped herbs (usually fresh dill).

• Hard cheese (200 g) grate large on a grater and fill it with chips. You can also use this technique: leave a third of the cooked cheese chips and sprinkle the rest of the cheese with baked meat only after you have determined that the dish is almost ready.

• Place the mold in a hot oven.

• You can easily determine the preparedness of a dish by potato - it should be soft and not crunch.

How to cook meat in French in other ways? Another version of this dish is given below.

One of its varieties is the preparation of pork in portioned chunks. This dish is prepared without potatoes, so it can be successfully served along with some garnish or as an independent treat. Meat should be prepared as for chops. Divide it into portions, beat off, salt and pepper to taste. Put on a baking sheet, richly greased with vegetable oil, and on each piece put the fried mushrooms and fried onion rings. If desired, apply a little mayonnaise for a better juiciness. Gently place the cheese on top of the meat. Bake in the oven for about half an hour.

If before arriving guests you reflect on how to cook meat: in French or simply chops, then use a festive recipe. Soak pork pieces in sweet wine. Finely chop the washed prunes and put it on the meat. Then do the same as the previous description.
