Do you like pastries the way we like it? Most of the population of our country (and not only ours) does not hesitate to answer in the affirmative. At the same time, we all know what the quality of modern products is in our supermarkets and even in the markets. For those who care about their health, our rubric is simple homemade recipes. And we will cook the most delicate biscuits "Rogaliki" in two different variations. This is an easy sand dessert that perfectly suits as a "compliment" to the morning coffee or will gather for the evening tea drinking family and friends. Tastes are all different, so we offer a choice of two recipes - one of which you will definitely have to taste.

Traditionally in our country, cook shortbread cookies "Rogaliki" with jam, but today many prefer a fragrant nut filling in this dessert. But this is not the only difference between today's baking, the recipe for the test will also differ. We will prepare a combo from a sand and yeast dough in one dessert. Interesting? Try both!

Bagels with fruit jam

Surely many owners of the house hid a couple of jars of favorite jam, jam or other confiture. For our recipe, anyone can. Instead of jams, you can use berries (frozen or fresh), ground with sugar to a uniform consistency.

Cooking process

The flour must be sieved in advance - so the dough will turn out to be more gentle and light. Melt butter or margarine in a large bowl. This can be done on a water bath or use a microwave oven. In the softened oil we add the following ingredients: salt, soda, apple cider vinegar and water. Do not be scared - by adding these ingredients, a chemical reaction will occur ("effervescent foam" will appear). Thoroughly mix everything until smooth.

Now you can gradually pour the sifted flour, well kneading dough hand. It should turn out thick and roll into a ball. However, be careful not to overdo it with flour. You do not want to eat tight, very dense cookies?

A table or a large cutting board is sprinkled with flour and in the middle we spread our soft dough. We divide it into several small parts (4-5). Each one should be rolled in a circle to a thin layer approximately 5 mm thick. And then cut into triangles.

We form and bake rollers

It's time for the filling. In the middle, closer to the bottom of each triangle, lay out a teaspoon (with a slide) of the filling - jam, jam or mashed berries. The lower corners of the triangle should be bent to the middle, and then roll our figures into the bagels, tightly pressing the dough. Take care that the filling does not look, otherwise during baking, the jam may leak out.

When all the tubes are ready to turn, turn the oven on 180 degrees. Cover the baking sheet with baking paper and lightly oil with vegetable oil, put the cookies and send to the oven for half an hour.

Serving a dish

Ready cookies "Rogaliki" can be served on a table on a beautiful flat dish, sprinkling them with powdered sugar or cinnamon. They combine well with tea and coffee.

The recipe for this dessert is significantly different from the previous one. The main difference is dough, in this case it will be yeast-yeast. Let's start with the test.

How to prepare a yeast dough?

First, we prepare all the necessary components:

  • 3-3.5 cups of flour;
  • 250 grams of margarine for baking or butter;
  • 120-130 ml of milk at room temperature;
  • A large spoonful of sugar;
  • 25 grams of yeast (fresh);
  • egg.

In a separate bowl, mix the yeast with sugar and thoroughly rub it. Gradually add warm milk. Beat whisk until smooth consistency. On the cutting board, cut the flour with butter so that a small crumb comes out. Add the egg, mix everything well. Now we connect both mixtures into one, knead the dough and roll it into a ball. It should be covered with a lid / food film and cleaned for an hour in a cold place. In the meantime, let's deal with the filling.

And what's inside?

We have already decided that our cookies will be with nuts. Choose any of your taste. The best are walnuts, hazelnuts or peanuts. These nuts have a pronounced taste, which is what we need. The amount depends on whether you like a lot of stuffing, or not enough. Our test quantity will take approximately 1-1.5 cups. Nuts must be pre-roasted and crushed with a blender or rolling pin.

We also need two egg whites, a pinch of salt and a glass of sugar. First beat the whites with salt. Then add nuts and sugar. Here and the filling is ready. If desired, you can add raisins, dried apricots and any other dried fruits to the nuts. Believe me, this combination will not disappoint you.

The final stage

We remove the dough, divide into several parts and roll out the same way as described in the first recipe. Further, the "Rogaliki" cookies are formed in exactly the same way as the sandbox. Sprinkle them on top of cinnamon, mixed with sugar. Sand and yeast rolls are also baked for about half an hour at a temperature of 190-200 degrees.
